The Baker 1 position at Grand Central Bakery is the entry-level role within the bakery's multi-tiered baker training program. This role is critical in learning the foundational skills required to produce high-quality artisan baked goods consistently and efficiently. Baker 1s are trained under the supervision of experienced Production Shift Managers and Shift Leads and are expected to develop competence in adhering to Food Safety Modernization Act (FSMA) guidelines as well as the bakery's strict quality standards. This position offers a full-time employment opportunity with compensation starting at $22.68 per hour, including overtime eligibility. The work schedule is flexible—since the bakery operates seven days a week and throughout the year, employees must be available to work weekends and holidays.
In this role, the Baker 1 is responsible for mastering the processes of baking, mixing, forming, fermenting, and proofing a variety of artisan breads and other baked goods. The Baker 1 gains familiarity with all baking floor equipment, including mixers, ovens, dividers, and loading systems. Attention to detail is paramount, as the position requires documenting accurate mix times, dough temperatures, and production counts while maintaining consistent quality control. The baker must know how to identify and cull unusable products and communicate any concerns about ingredients, equipment, or production flows to leadership promptly. The position also emphasizes teamwork and communication, requiring bakers to work cooperatively within a fast-paced environment, support fellow team members, and contribute to training peers as they grow professionally.

Job Requirements
- Must be at least 18 years old
- Maintains a valid Food Handler's Card at all times
- Demonstrates regular attendance and punctuality
- Ability to work a variety of days and shifts including weekends and holidays
- Basic math skills required
- Professional baking experience preferred
- Working knowledge of basic English preferred

Job Duties
- Bake, mix, form, fermentation, proofing of all products
- Understand use of all equipment on bread production floor
- Maintain accurate counts
- Meet quality and production pace expectations
- Follow FSMA guidelines and maintain records and food safety goals
- Quality control of product, culling unusable loaves, and reporting shortages to PIC
- Take account of mix times and dough temperatures and accurately record results
- Communicate critical information to Shift Lead, Manager, and Delivery including equipment issues, supply concerns, maintenance or cleaning needs, and accurate counts
- Have knowledge of all bread products and describe their properties
- Use checklists and training documents to produce accurate baking results
- Be aware of and communicate final product goals
- Understand financial goals and the impact of lost product
- Know and act according to the mission, vision, and values of Grand Central Bakery
- Work collaboratively with a team and communicate respectfully
- Contribute to training team members
- Deliver excellent customer service
