The Baker 1 position at Grand Central Bakery offers an opportunity to develop foundational baking skills under the guidance of production shift managers and shift leads. Individuals in this role will engage in various bakery production activities such as mixing, baking, forming, proofing, and fermentation, all aimed at producing consistent, artisan-quality bread products. The position is expected to transition to a Baker 2 role upon successful training and demonstrated competency in the necessary skills and responsibilities.

Compensation for the Baker 1 role is hourly at $22.34, with eligibility for overtime pay, reflecting the non-exempt employment status. The bakery operates every day of the year, thus requiring schedule flexibility, including weekend shifts. Job Duties

  • Bake, mix, form, fermentation, proofing of all products
  • Understand use of all equipment on bread production floor
  • Maintain accurate counts
  • Meet quality and production pace expectations as per Level 1 training requirements
  • Follow FSMA guidelines and maintain records and food safety goals
  • Quality control of product, culling unusable loaves and reporting shortages
  • Take account of mix times and dough temperatures and accurately record results
  • Communicate critical information to Shift Lead, Manager, and Delivery including equipment issues, supply concerns, maintenance or cleaning needs, and product counts
  • Have knowledge of all bread products and describe properties
  • Use checklists and training documents to produce accurate results
  • Communicate final product goals
  • Understand financial goals and impact of lost product
