The position of Baker 1 at Grand Central Bakery is an entry-level role within the production team, designed for individuals eager to learn and grow in the craft of artisan baking. This role is critical to the company’s commitment to producing high-quality, flavorful bread and baked goods while maintaining rigorous standards for food safety and production efficiency in line with FSMA (Food Safety Modernization Act) requirements. Baker 1 candidates will receive comprehensive training to master the baking process, including mixing, forming, fermenting, and proofing various products. The role requires high attention to detail, strong teamwork capabilities, and an eagerness to advance through the baking levels by demonstrating competence and mastery of foundational baking skills.
This non-exempt, hourly position pays $22.34 per hour with overtime eligibility and operates under the terms of the BCTGM union collective bargaining agreement, which represents bread bakers and dishwashers. Baker 1 employees report directly to the Production Shift Manager and Shift Lead and work in a fast-paced environment that requires schedule flexibility, including weekend and holiday shifts, as the bakery operates 7 days a week, year-round.
Successful candidates will play an integral role in maintaining the quality and consistency of Grand Central Bakery’s products. They will gain experience using key bakery equipment such as rack and hearth ovens, mixers, dividers, and dough formers. The role emphasizes maintaining accurate production records, adhering to safety protocols, communicating effectively with team members and leadership, and supporting the bakery's overall mission and values. Bakers also contribute to training peers and upholding an anti-racist, inclusive workplace culture. Physically, the job requires standing for extended periods, frequently lifting and carrying up to 50 pounds, and working in environments exposed to flour and grain dust. Job Requirements
- Must be at least 18 years old
- Maintains a valid Food Handler's Card at all times
- Follows health department guidelines at all times
- Basic math skills required
- Demonstrates regular attendance and punctuality
- Ability to work various days and shifts including weekends and holidays
- Ability to comply with safety requirements and procedures
- Ability to stand for long periods and lift frequently up to 50 pounds
- Ability to communicate effectively in English
- Willingness to work in warm environments and exposure to grain and wheat flour dust
- Ability to work cooperatively in a team and communicate respectfully
- Ability to report hazards and injuries promptly
- Flexibility to work a schedule that supports a 7-day-a-week production
Job Qualifications
- Must be at least 18 years old

- Professional baking experience preferred
- Working knowledge of and ability to speak and understand basic English preferred
- Demonstrates regular attendance and punctuality

Job Duties
- Bake, mix, form, fermentation, proofing of all products
- Understand use of all equipment on bread production floor
- Maintain accurate counts
- Meet quality and production pace expectations as per Level 1 training requirements
- Follow FSMA guidelines and maintain records and food safety goals
- Perform quality control of product, culling unusable loaves and reporting shortages
- Take account of mix times and dough temperatures and record results accurately
- Communicate critical information to Shift Lead, Manager, and Delivery including equipment issues, supply concerns, maintenance needs, product counts, and shortages
- Demonstrate knowledge of all bread products and describe properties of different products
- Use checklists and training documents to produce accurate results at every step of the baking process
- Be aware of and communicate final product goals
- Understand financial goals of the department and impact of lost product
