The Baker 1 role at Grand Central Bakery is an entry-level position designed for individuals eager to build and refine their skills in artisan bread production. It functions as the foundational starting point in a structured progression through three baker levels, with opportunities for advancement upon successful completion of training and demonstration of competence. This position requires a keen attention to detail, a dedicated approach to learning, and a cooperative spirit to thrive in a fast-paced production environment. Bakers at this level will learn to produce a range of breads while adhering strictly to Food Safety Modernization Act (FSMA) guidelines to ensure the highest standards of food safety and quality.
Working at a competitive wage of $21.48 per hour, this non-exempt role offers eligibility for overtime and operates under a collective bargaining agreement with the Bread Bakers and Dishwashers Union. The schedule demands flexibility, including early morning starts at 5 a.m. and weekend shifts, supporting the bakery’s commitment to being operational 365 days a year. Baker 1 individuals are directly managed by the Production Shift Manager and accountable to the Shift Lead, emphasizing teamwork and clear communication.
In this role, candidates will engage hands-on with various stages of artisan bread production, including mixing, forming, fermentation, proofing, and baking. They will gain proficiency in using bakery equipment such as ovens, mixers, dividers, and loaders. Bakers will also be responsible for maintaining accurate production records, quality control, and reporting any issues or inefficiencies. The job fosters a supportive environment for continuous improvement and team collaboration, with a clear focus on meeting quality, pace, and safety goals. Job Requirements
- Must be at least 18 years old
- Maintains a valid Food Handler's Card and follows health department guidelines
- Must demonstrate regular attendance and punctuality
- Ability to work a variety of shifts including early mornings, weekends, and holidays
- Able to stand and walk for extended periods
- Able to lift up to 50 lbs and push/pull up to 200 lbs
- Must follow all safety training and instructions
- Willingness to work in warm, flour dust-exposed environments
Job Qualifications
- High school diploma or equivalent preferred
- Professional baking experience is preferred
- Working knowledge of basic English preferred
- Ability to follow FSMA and safety guidelines
- Strong attention to detail and willingness to learn
- Ability to work as a team player
- Good communication skills
- Basic math skills
Job Duties
- Bake, mix, form, fermentation, proofing of all products
- Understand use of all equipment on bread production floor
- Maintain accurate counts
- Meet quality and production pace expectations as per Level 1 training requirements
- Follow FSMA guidelines and maintain food safety records
- Perform quality control of product, cull unusable loaves, and report shortages
- Take account of mix times and dough temperatures and accurately record results
- Communicate critical information to Shift Lead, Manager, and Delivery including equipment issues, supply concerns, maintenance or cleaning needs, and product counts
- Have knowledge of all bread products and describe their properties
- Use checklists and training documents for accurate results
- Communicate final product goals and understand financial impacts of lost products
- Work collaboratively and communicate professionally with teammates
- Contribute to training of team members on trained stations
- Deliver excellent customer service
- Maintain and continuously apply competencies
- Commit to creating an anti-racist and culturally inclusive environment
- Follow all safety requirements and report potential hazards and injuries promptly
