The Prep Cook position at Sea Island plays a pivotal role in maintaining kitchen efficiency and supporting the culinary team to deliver high-quality dishes with consistency and care. Prep Cooks are responsible for preparing recipes listed on the Daily Prep Board or as directed by management, ensuring all ingredients and prep work meet quality standards and are completed in a timely manner. This role is dynamic and cross-functional, requiring the employee to be versatile in performing multiple tasks within the kitchen. These tasks include but are not limited to breading seafood such as fish, shrimp, and oysters; assembling salads and side items; peeling and preparing shrimp; hand-filleting fish; stocking and maintaining food storage areas; and handling shrimp and oyster stations with precision.
In this position, Prep Cooks not only assist in preparing and organizing ingredients but also play a critical part in the kitchen’s sanitation and operational procedures. Ensuring stations are clean, organized, and well-stocked contributes directly to overall kitchen efficiency and food safety compliance. Job Requirements
- Properly execute all recipes
- Embrace teamwork within the company, creating a positive work environment
- Properly sanitize and set up station according to restaurant's guidelines
- Maintain a clean, clutter-free and organized station at all times
- Maintain clean and organized food and other kitchen storage areas
- Follow all company policies for dating, wrapping, rotating and storing of food product
- Follow guidelines for daily operating procedures (line check, station schematics, waste sheet)
- Follow production systems while utilizing stated pars
- Break down and clean station at the end of the shift, follow daily cleaning list
- Complete a positional training program with validation measures throughout
- Adhere to all food safety and sanitation standards
- Perform other job-related activities as required or assigned by manager
Job Qualifications
- Must be at least 18 years of age
- Reading skills
- Ability to stand and walk during entire shift
- Ability to reach, bend, stoop, and lift up to 50 lbs
- Ability to work in a fast-paced environment
- Ability to work accurately and under pressure
- Team player with other employees
Job Duties
- Prepare recipes as listed on the Daily Prep Board or as directed by management
- Perform breading of fish, shrimp, and oysters to supply cooks
- Assemble salads, side items, and other menu items per guest orders
- Peel shrimp and assemble shrimp items to supply cooks
- Hand-filet fish and cut into serving sizes according to recipe
- Stock and organize newly received items in proper storage areas
- Maintain cleanliness of dry storage, refrigerator, and preparation areas
- Thaw, sort, peel, skewer, and cook shrimp products to daily par levels
- Scrub, wash, and ice down shell oysters for shucking
