The Prep Cook position in the Food and Beverage Department reports directly to the Executive Chef. This part-time, hourly, and non-exempt role plays a vital part in the kitchen operations at venues such as the Wilmington Convention Center. The Prep Cook is responsible for the hands-on preparation and production of hot and cold foods, working under strict standards and procedures established by the Food and Beverage Director and Executive Chef. Maintaining an organized and sanitary workstation is a critical component of this role, along with labeling and dating food items for storage and retail concessions.
This role requires excellent attention to detail, the ability to follow recipes and preparation standards, and a strong commitment to minimizing waste through controlled usage and overage. The Prep Cook assists with preparing vegetables, baked goods, proteins, and salads, ensuring that all food items meet high-quality standards suited for concessions. Flexibility is essential, as this role may require working evenings, weekends, and holidays to support events.

Job Requirements
- High school diploma or GED
- Minimum of 2 years of food service experience in a commercial or restaurant kitchen environment
- Knowledge of food service health and safety standards
Job Qualifications
- Ability to read and understand English
- Ability to learn operation of all kitchen equipment
- Strong knowledge of safe health standards
- Strong knowledge of sanitary practices
- Ability to recognize and utilize weights and measurements, dry and liquid
- Ability to lift 40 pounds
- Must be able to identify and properly use all kitchen small wares
- Ability to produce high quality food in a fast-paced environment
- Positive customer service attitude at all times
- Maintains proper grooming and dress code standards
- Work ethics encourage strong urgency and quality in a team environment
- Available to work flexible hours, including nights, weekends, and holidays
- ServSafe Food Handler Certification or ability to acquire certification within 6 months of employment
Job Duties
- Maintain organized sanitary workstation
- Properly label and date food items for storage and retail concession sales
- Assist in preparation of cut vegetables, baked goods, proteins, and salads
- Minimize waste by controlling overage and usage
- Follow approved recipes and production standards
- Prepare all food for concessions as directed by Executive Chef
- Perform other duties and tasks assigned by supervisor
