The role of Prep Cook at the Oregon Zoo is a critical position within Levy's team, focused on food preparation and customer service. A Prep Cook at Levy is responsible for following detailed production schedules and recipes to ensure quality and consistency in food offerings. Working under the guidance of the Chef, the Prep Cook prepares various food items, adhering strictly to federal, state, and local health regulations and safety standards, including HACCP guidelines. This role demands precision in labeling, storing, and dating food items, maintaining sanitation, and documenting production and waste accurately. The Prep Cook also plays an essential role in serving customers promptly and professionally, handling customer orders that require short preparation times and managing multiple stations including steam tables and grills.

Job Requirements

  • Must be at least 18 years old
  • Ability to stand for extended periods
  • Must be able to work flexible hours including weekends and holidays
  • Ability to follow health and safety regulations
  • Must pass a background check if required by state regulations
  • Willingness to learn and adapt to new procedures
  • Basic literacy and numeracy skills

Job Qualifications

  • High school diploma or equivalent preferred
  • Previous experience in a food preparation or kitchen role is a plus
  • Knowledge of food safety and sanitation standards
  • Ability to follow recipes and production guidelines accurately
  • Strong communication and customer service skills
  • Ability to work in a fast-paced environment
  • Basic equipment operation skills
  • Team player attitude

Job Duties

  • Obtain daily production schedule and preparation requirements from the chef
  • Prepare items on production sheets following established quantities and recipes
  • Complete and follow daily production worksheets and waste log sheets
  • Taste completed meals to ensure quality
  • Operate and clean equipment per department procedures after each use
  • Store, label, and date all food items according to policy
  • Follow HACCP guidelines
  • Complete all required documentation, reports, and logs as required
  • Comply with federal, state and local health and sanitation regulations and department sanitation procedures
  • Take orders from customers and prepare items requiring short preparation time
  • Serve customers in an efficient and friendly manner
  • Complete orders from steam tables and grill and serve customers at multiple stations
  • Use approved food recipes and production standards to ensure proper quality, serving temperatures, and standard portion control
  • Resolve customer concerns
  • Perform other duties as assigned
