During AM shifts, the prep cook follows a prep list created by the Executive Chef or Sous Chef, supporting designated stations by preparing food items ready for cooking or service. Additionally, as the AM back-up, this role involves setting up the steam table on the front line with appropriate water levels and pans, following daily backup sheets, and heating food to proper temperatures ensuring food safety and readiness for service.
This role requires an individual capable of working efficiently in a fast-paced, high-pressure environment. The ability to prioritize tasks, remain calm under pressure, work with speed and accuracy, and handle multiple responsibilities simultaneously is crucial for success in this role. The physical demands involve standing for the entire shift, frequent bending, stooping, reaching, and the ability to carry moderately heavy loads multiple times per shift.

Job Requirements
- high school diploma or equivalent
- prior experience in food preparation or kitchen assistance preferred
- ability to stand for entire shift
- ability to frequently reach, bend and stoop
- capacity to carry 35lbs about ten times per shift over medium distances
- good verbal communication skills
- willingness to work in fast-paced environment

Job Duties
- Follow prep list created by Executive Chef or Sous Chef using set recipes
- measure ingredients and seasonings to be used in cooking
- wash and chop vegetables, cut meat to prepare for cooking
- label and stock all ingredients in an organized way for easy access
- follow recipes, portion controls and presentation specifications as set by Melvin's
- maintain a clean and organized station while practicing good safety and sanitation skills during prep and service
- set up steam table on Front Line with appropriate water levels and pans in place
- follow 'Daily Backup Sheet' and heat up all food to proper temperatures for service
- perform other kitchen duties as assigned
