The role of the prep cook is essential to the smooth operation of the kitchen. The prep cook is responsible for the preparation of various food products including meats, seafood, poultry, vegetables, sauces, soups, and other menu items. This position requires utilizing a variety of kitchen equipment and utensils to complete daily prep lists efficiently and according to quality standards. The prep cook plays a vital role in maintaining kitchen cleanliness and organization by sanitizing workstations and properly storing food to prevent spoilage. Additionally, the role involves receiving food supplies and kitchen equipment, ensuring all items are stored correctly in refrigeration and storage areas.

The prep cook must have a thorough understanding of portion sizes, cooking methods, and standard kitchen protocols to uphold the restaurant's standards. Working closely with cooks and kitchen staff, the prep cook assists in a team-oriented environment where communication and cooperation are key. On top of preparing food items, the prep cook helps with opening and closing duties, inventory checks, and maintaining a safe working environment by following all sanitation and safety guidelines. Job Duties

  • Refer to daily prep list at the start of each shift for assigned duties
  • Understand and comply with standard portion sizes, cooking methods, quality standards, and kitchen rules, policies, and procedures
  • Clean and sanitize workstation area including tables, shelves, walls grills, broilers, fryers, pasta cookers, saute burners, convection oven, flat top range and refrigeration equipment
  • Store food in designated containers and storage areas to prevent spoilage
  • Prepare a variety of foods, such as meats, vegetables, or desserts, according to customers' orders or supervisors' instructions, following approved procedures in broilers, ovens, grills, fryers and a variety of other kitchen equipment
  • Receive food supplies, equipment, and utensils and store them in refrigerators, cupboards, and other storage areas
  • Remove trash and clean kitchen garbage containers
  • Assist cooks and kitchen staff with various tasks as needed, and provide cooks with needed items
  • Carry food supplies, equipment, and utensils to and from storage and work areas
  • Promptly inform supervisors when equipment is not working properly and when food and supplies are getting low, and order needed items
  • Stir and strain soups and sauces
  • Follow all safety and sanitation guidelines while handling equipment, performing tasks, and work safely in the kitchen area/coolers
  • Complete opening and closing checklists and assist others in opening and closing the kitchen
  • Coordinate with and assist fellow employees to meet guests’ needs and support the operation of the restaurant
  • Fill-in for fellow employees where needed to ensure guest service standards and efficient operations
  • Performing other work-related duties as assigned - including working the line, doing prep, and executing quality control
