Gracious Hospitality Management is an award-winning hospitality group renowned for its innovative and upscale dining experiences. As part of its exciting growth, Gracious Hospitality Management is launching its newest ambitious project at 550 Madison Avenue, located in the iconic Sony Building. This multi-level, 15,000-square-foot culinary destination is designed by the prestigious Rockwell Group and will feature three distinct and exquisite dining concepts. These include the second New York location of the Michelin-starred COTE Korean Steakhouse, an all-day multi-bar and dining experience called Chimera, and Sushi Yoshitake, an intimate sushi restaurant led by Michelin-starred Chef Masahiro Yoshitake with design collaboration from Yoshio Itai.
The 550 Madison project aims to redefine immersive and transportive dining in Midtown Manhattan by blending world-class cuisine, elegant interiors, and exceptional service. To support this expansion, Gracious Hospitality Management is seeking dynamic and experienced team members across various positions including prep cook, polisher, line cook, porter, receiver, pastry cook, drink runner, server assistant, server, food runner, and host. The role of a prep cook at 550 Madison is key to the smooth operation of the back-of-house culinary team. Prep cooks are responsible for setting up and sanitizing workstations, preparing ingredients precisely according to recipes and daily prep lists, assisting the Chef de Cuisine and sous chefs, and ensuring all health, safety, and sanitation standards are adhered to. Duties involve measuring and cutting ingredients, preparing pickles and kimchi, monitoring stock levels, labeling and organizing food items, and maintaining cleanliness to avoid cross-contamination. The position requires proficient knife skills and a solid understanding of various cooking techniques, particularly with a preference for Korean cuisine knowledge. Prep cooks must be organized, able to follow instructions in English, communicate effectively, and remain professional under pressure in a fast-paced environment. A culinary arts degree is preferred but not mandatory, and food handler certification or the ability to obtain one is required. Job Requirements

- 1+ years relevant culinary experience preferred

Job Duties
- Sets up and sanitizes workstations prior to prep work
- produces assigned menu dishes according to prep lists
- measures ingredients and prepares cooking ingredients
- undertakes basic cooking duties such as cutting, slicing, peeling, monitoring stock, reducing sauces, preparing pickles and kimchi
- ensures all food and items are properly stored, tagged, labeled, covered, and rotated
- complies with nutrition and sanitation guidelines
- supervises food and cooling room temperatures
- labels, stocks, and organizes ingredients for accessibility
