This includes producing menu items, maintaining kitchen cleanliness, setting up and breaking down stations, and following food safety and HACCP procedures. The role emphasizes the importance of recipe adherence and proper documentation, such as recording pre- and post-weights of food and tracking yields to optimize kitchen operations.
Additionally, the Prep Cook handles tortilla production—specifically masa production, pressing corn tortillas, dealing with flour tortilla dough balls, and cooking tortillas on flat tops to precise standards. These specialized responsibilities require attention to detail and proficiency with kitchen tools and equipment.
Complete preparation and organization are essential to this role, ensuring that the kitchen runs smoothly and efficiently during shifts. Physical readiness is also important, as the job requires lifting up to 40 pounds and using various kitchen equipment including fryers, char grills, flat tops, immersion blenders, and mandolins.

Job Requirements
- Must meet state and local requirements for Food Handler’s certification
- Certification(s) must be obtained by your first day or within the timeline required by your location
- Familiarity with kitchen equipment including fryer, char grill, flat top, stove, RoboCoups, immersion blender, dicers, mandolin, and scales
- Ability to lift a minimum of 40 lbs
- Basic knife safety
- Basic communication and reading skills
- Ability to multi-task
- Kitchen experience is a plus
- Must be 18 years of age

Job Duties
- Produce food items listed on the daily prep sheet according to Torchy’s standards and recipes
- Maintain a clean and organized kitchen including the walk-in and detail kitchen equipment daily
- Properly set up and break down your station ensuring readiness for the shift and cleanliness afterward
- Use the Taco Bible to follow all recipes accurately, upholding food standards
- Practice proper food safety and HACCP techniques including FIFO inventory management
- Record pre- and post-weights of food items, track yields for each recipe, and label, date, and fill pans correctly
- Rotate products as needed and assist with other duties as requested by management
- Prepare masa and press corn tortillas using a tortilla press
- Slack flour tortilla dough balls and ensure proper booking of tortillas
- Cook tortillas on a flat top to correct specifications
