Job Duties

  • Prepare ingredients according to daily prep lists by cutting, portioning, and labeling
  • ensure items are stored correctly with labeling, dating, and FIFO rotation
  • thaw proteins in refrigerator only, sealed with plastic
  • use clean containers for new prep without mixing old and new products
  • mix and prepare liquids, seasonings, and sauces as directed
  • keep a running list of items needed for next prep cycle and upcoming truck order
  • wash and sanitize all dishes, pots, pans, and utensils using 3-compartment sink
  • rotate and replace sanitizer buckets every 2 hours on kitchen line and FOH
  • keep cookware, utensils, and equipment clean and available
  • remove trash and replace liners throughout shift
  • keep back hallway clear with minimum 3-foot clearance
  • put away all deliveries using FIFO
  • break down and recycle all cardboard in designated area
  • assist with fryer cleaning as directed
  • wipe down surfaces, equipment, and counters throughout shift
  • clean and maintain guest restrooms regularly
  • stock paper towels and soap at hand-wash stations and restrooms
  • clean windows and hood filters on established schedule
  • keep storage and back-of-house areas organized and accessible
