The role of a Prep Cook at Cooper's Hawk is integral to maintaining the high standards of their menu and food quality. The Prep Cook is responsible for the preparation and execution of various cold and hot food items, ensuring consistency and adherence to Cooper's Hawk's quality standards. This position requires working with a team to maintain a clean, safe, and organized kitchen environment and directly supports the kitchen's daily operations. Duties include preparing ingredients, making sauces, carving meats and cheeses, portioning food, and maintaining kitchen equipment and workstations to company specifications. The Prep Cook plays a crucial part in delivering the signature Cooper's Hawk dining experience to every guest.

Job Requirements

  • Must represent Cooper's Hawk values
  • Must be at least 18 years of age
  • Previous prep or line cook experience preferred
  • Thrives in a team-based environment
  • Basic knowledge of professional cooking and use of basic knife skills with cut glove
  • Knowledge of safety, sanitation and food handling procedures
  • Ability to follow recipes and instructions
  • Ability to communicate clearly with guests, managers and team members
  • Must be able to read, write and understand English
  • Ability to multi-task in a fast-paced environment
  • Ability to work flexible shifts and schedules inclusive of weekends and some holidays
  • Ability to lift and carry up to 50 lbs
  • Ability to stand and walk up to 10 hours per shift
  • Ability to exert fast-paced mobility for periods of up to 6 hours
  • Ability to work within conditions of wet floors, temperature extremes and loud noise
  • Ability to perform essential functions to Cooper's Hawk standards with reasonable accommodation

Job Duties

  • Maintain Cooper's Hawk quality standards by preparing assigned recipes to specification
  • Wash, peel, slice, and mix vegetables, fruits or other ingredients for salads, cold plates, and garnishes
  • Prepare hot and cold sauces
  • Carve and slice meats and cheese
  • Portion food for service
  • Measure and mix ingredients to make salad dressings and cold desserts
  • Set up station according to established specifications
  • Maintain kitchen equipment in like new condition
  • Maintain a safe, clean, organized and stocked work area
  • Adhere to all kitchen systems and standards including completion of 10-minute cleaning procedures
  • Maintain professional relationships and clear communications with all Managers and Team Members
  • Follow departmental checklists and standard operating procedures to ensure work areas are prepared for opening, mid-shift or closing in accordance with company guidelines
  • Perform other duties as assigned
