We are currently seeking a skilled and experienced prep cook to join our dynamic culinary team. This role plays a crucial part in the preparation and execution of the diverse menus served aboard our vessels, ranging from casual buffet-style meals to sophisticated plated dining experiences. The prep cook is responsible for all preliminary food preparation, including peeling, cutting, searing, grilling, boiling, blanching, assembling fruit trays, preparing stocks, and portioning proteins. Attention to detail and adherence to strict health and sanitation standards are paramount in this role. The ideal candidate will demonstrate the ability to work efficiently both independently and as part of a team under the direction of the Executive Chef. They must maintain a clean and organized work station, demonstrate punctuality, and possess a professional appearance at all times.
This position requires a strong knowledge of Pacific Northwest cuisine and fine dining standards, along with experience working in kitchen environments that demand the highest levels of cleanliness and organization. Job Requirements
- High school diploma or equivalent
- culinary degree is preferred
Job Qualifications
- Must have previous fine dining experience
- must have experience with Pacific Northwest cuisine
- must have high standards of sanitation and knowledge of Washington state health codes
- must possess a current Washington state food handler’s card
- able to interact with customers and other crew members in English
- positive attitude
Job Duties
- Duties include basic prep for the main kitchen, peeling, cutting, searing, grilling, boiling, blanching, fruit trays, stocks, portioning proteins
- responsible for daily prep list, loading food on vessels within designated timeframe, and opening and closing of the galley kitchen
- plating hot food, setting up buffets, and following dinner service timeframe while working closely with FOH staff
- maintain the overall cleanliness of the kitchen
- must be able to work with and without supervision
- must have a clean and professional appearance and work station at all times
- ability to be self-motivated and thrive under pressers
- must be punctual and reliable
- must be able to take direction from the Executive Chef and work well as part of a team
