We are currently seeking Prep Cooks to join our dynamic kitchen team. The role of the Prep Cook at Sea Island is vital to the smooth operation of our food preparation areas. This position involves preparing recipes as listed on the Daily Prep Board or as directed by management and being cross-trained to perform at multiple key positions within the kitchen. These positions include breading fish, shrimp, and oysters; assembling salads and side items; peeling and preparing shrimp; hand-fillet fish; stocking and organizing storage areas; and maintaining the shrimp and oyster station. This variety of tasks allows the Prep Cook to develop diverse skills and contribute meaningfully to the success of the culinary team.
The ideal candidate will be someone who embraces teamwork, pays close attention to detail, and follows food safety and sanitation procedures meticulously. They will efficiently manage their station, keep work areas clean and organized throughout the shift, and ensure all food products are stored and handled according to company policies. The Prep Cook will also be responsible for completing training programs and validation measures to ensure consistent performance.

Job Requirements
- Properly execute all recipes
- Embrace teamwork within the company creating a positive work environment
- Properly sanitize and set up station according to restaurant’s guidelines
- Maintain a clean, clutter-free and organized station at all times
- Maintain clean and organized food and other kitchen storage areas
- Follow all company policies for dating, wrapping, rotating and storing of food product
- Follow guidelines for daily operating procedures including line check, station schematics, and waste sheet
- Follow production systems while utilizing stated pars
- Break down and clean station at the end of the shift, follow daily cleaning list
- Complete a positional training program with validation measures throughout
- Adhere to all food safety and sanitation standards
- Perform other job-related activities as required or assigned by manager
Job Qualifications
- Must be at least 18 years of age
- Possess reading skills
- Ability to stand and walk during the entire shift
- Ability to reach, bend, stoop, and lift up to 50 lbs
- Ability to work in a fast-paced environment
- Ability to work accurately and under pressure
- Team player with other employees
Job Duties
- Prepare recipes as listed on the daily prep board or as directed by management
- Bread fish, shrimp, and oysters using milk wash and breading materials
- Assemble salads, side items, and other menu items according to guest orders
- Peel shrimp and prepare various shrimp items to supply cooks
- Hand-fillet fish and cut into various serving sizes as per recipe
- Put newly received items in proper storage areas and maintain cleanliness of storage and preparation areas
- Thaw, sort, peel, skewer, and cook shrimp products and scrub, wash, and ice down shell oysters
