We are currently hiring a full-time Prep Cook position at the Mayo Clinic location in Jacksonville, FL. This role is essential in maintaining high standards of food preparation and customer service within the healthcare foodservice environment. The Prep Cook will be responsible for preparing food items according to production schedules and recipes, ensuring compliance with federal, state, and local health regulations, including HACCP guidelines. This position demands attention to detail, the ability to work efficiently in a fast-paced environment, and a commitment to quality. The Prep Cook will operate, clean, and maintain kitchen equipment, document production and waste logs, serve customers courteously, take orders for items needing short preparation time, and handle food storage with proper labeling and dating. Some weekend work is required, with shifts varying between AM and PM to meet the needs of the facility.

The position offers a competitive fixed pay rate of $19.00 per hour and is ideal for individuals with previous cooking, food preparation, or back-of-house experience who want to make a meaningful difference in the lives of patients and staff through high-quality food service. Job Requirements

  • Previous cooking, food prep, or back of house experience required
  • Ability to work full-time with varying schedules including AM and PM shifts
  • Availability to work some weekends
  • Willingness to comply with health and safety standards including HACCP guidelines
  • Ability to perform physical tasks related to food preparation
  • Must be able to perform essential job functions satisfactorily with or without reasonable accommodation
  • Certain positions may require Florida Level 2 background screening

Job Duties

  • Obtain daily production schedule and preparation requirements from the Chef
  • Prepare items on production sheets following established quantities and recipes
  • Complete and follow daily production worksheets and waste log sheets
  • Taste completed meals to ensure quality
  • Operate and clean equipment per department procedures after each use
  • Store, label and date all food items according to policy following HACCP guidelines
  • Complete all required documentation, reports, and logs as required
  • Comply with federal, state and local health and sanitation regulations and department sanitation procedures
  • Take orders from customers and prepare items requiring short preparation time
  • Serve customers in an efficient and friendly manner
  • Complete orders from steam tables and grill and serves customers at multiple stations
  • Use approved food recipes and production standards to ensure proper quality, serving temperatures and standard portion control
  • Resolve customer concerns
  • Perform other duties as assigned
