The Prep Cook position under the supervision and direction of the Sous Chef – Food and Beverage is designed for experienced culinary professionals passionate about Asian cuisine. This role primarily supports the Junior Chef by preparing specialized dishes focusing on dim sum, Chinese BBQ, and wok station items. The Prep Cook plays an essential role in maintaining high standards of food quality, hygiene, and timely production. The position requires expertise in handling authentic Asian ingredients and mastery in kitchen operations including prepping spices, vegetables, meats, sauces, and rice-based dishes according to specific recipes. The role's duties include assisting with production control to ensure recipes are followed accurately and that food is prepared to the highest standards consistently.
In addition to the food preparation, the Prep Cook helps organize weekly and daily work schedules for the Asian kitchen team, supporting smooth operational flow. This role demands proficiency in inventory management, adherence to food rotation and sanitation standards, and overseeing the training and retraining of kitchen personnel to maintain efficiency across food prep and production areas. Communication is vital, as this position requires constant updates and coordination with co-workers, junior chefs, and supervisors to guarantee proper production levels and address issues promptly.
The Prep Cook must be able to work in a high-volume kitchen environment, exhibit strong knife skills, and be adept at multitasking various cooking methods to service guests without interruption. - minimum three years experience working as prep cook or similar role

- must possess strong knife skills
- must have knowledge of food preparation and presentation
- ability to follow procedures and take direction
- must be able to read recipes, production lists, and other necessary paperwork
- must obtain and maintain Food Handler's Card
- may be required to obtain and maintain gaming license
- no driving responsibilities
- must be able to work evenings, weekends, and holidays
- must be able to lift up to 40 pounds occasionally
- must maintain neat, clean, and well-groomed appearance

Job Qualifications

Job Duties
- Gather required paperwork and review order tickets
- prepare ingredients such as spices, meats, vegetables, sauces, noodles, and rice
- perform overall prep work to support next day or shift
- assist in daily inventory control to avoid shortages
- ensure proper food storage following First-In-First-Out regulations
- label and date food items, dispose of expired items
- maintain consistency in recipe flavor profiles, quality, and appearance
- stock workstations for business flow and restock before shift end
- utilize basic cooking techniques with strong knife skills
- train and retrain kitchen personnel in all areas
- communicate effectively with team members and supervisors
- report discrepancies, accidents, or concerns
- maintain cleanliness and organization of work area
- assist with special projects like banquets, meetings, and special events
- keep notes on production levels and daily observations
- perform other duties as assigned to support department operations
