The Prep Cook role at Ojos Locos is vital to the kitchen’s success, involving the preparation of ingredients and assisting with basic cooking tasks. This position requires washing and chopping vegetables, cutting and portioning meats, and preparing simple dishes such as salads and entrees. The Prep Cook is also responsible for maintaining cleanliness in the kitchen by washing dishes, sanitizing surfaces, and disposing of trash. The role demands adherence to recipe guides to ensure consistent food quality, proper storage of ingredients, and monitoring ingredient quantities to support smooth daily operations. Additionally, the Prep Cook must supervise food temperatures and cooling room conditions to uphold food safety standards.

Job Duties

  • Measures ingredients and prepares them in accordance to Ojos Locos recipe guides
  • washes and peels ingredients in order for them to be used in different meals
  • cuts and portions different types of meat according to specifications
  • keeps track of ingredient quantities and ensures there are always enough for the day/week
  • stores ingredients in dedicated containers, making sure that they are best preserved
  • informs superiors when the ingredients stock is getting low or when the kitchen tools do not work
  • cleans and sanitizes the working surfaces, tools, utensils and working area
  • carefully supervises the food temperature and the temperature from cooling rooms, to ensure that the ingredients kept are kept at the appropriate temperature
