The position of Prep Cook at Logans Roadhouse is an essential role within the kitchen brigade, responsible for supporting the smooth operation of food preparation tasks. The Prep Cook works directly under the supervision of the Chef or Kitchen Manager, following detailed recipes and prep lists to ensure consistency and efficiency. Job Duties

  • Prepares and cooks food requiring longer preparation time
  • Ensures that the daily prep tasks are completed prior to service
  • Follows basic recipes and product directions for preparing, seasoning, cooking, tasting, carving and serving soups, meats, vegetables, desserts and other foodstuffs
  • Prepares food by operating kitchen equipment to measure, mix ingredients, wash, peel, cut, shred fruits and vegetables, and trim and cut meat
  • Tastes products, checks production, and keeps records to plan production requirements and requisition supplies and equipment
  • Cleans and sanitizes workstations and equipment
  • Uses proper measurements as stated in recipes
  • Retrieves all items required for prep from dry storage and walk-in cooler
  • Follows proper protocol for cooling prepped items in compliance with food safety guidelines
  • Prevents and mitigates risk of cross contamination
  • Maintains clean work station applying a clean-as-you-go approach
  • Uses proper PPE such as cut gloves
  • Assists with cleaning dishes, utensils, and other food containers as needed
