This specific opportunity is based at the MODA Center in Portland, Oregon, home of the NBA's Portland Trailblazers and WNBA's Portland Fire. The position offers a salary range of $68,000 to $75,000 annually and is classified under pay grade 12. The role of Sr. Sous Chef – Premium is pivotal in supporting the Executive Sous Chef to lead all aspects of premium culinary operations, including luxury suites, clubs, VIP catering, and marquee event catering. This leadership position demands creativity, meticulous attention to detail, and the ability to manage complex, high-volume service periods. The Sr. Sous Chef will collaborate closely with the executive culinary leadership to develop innovative menus that reflect current culinary trends and seasonality while ensuring flawless execution and consistent quality standards.

Beyond day-to-day kitchen management, the role includes responsibilities such as overseeing premium catering events, driving food cost controls, reducing waste, training and mentoring culinary staff, and maintaining compliance with food safety and sanitation regulations. Job Requirements

  • High school diploma or equivalent
  • associate's degree in Culinary Arts or equivalent experience
  • minimum of 3-5 years of progressive culinary leadership experience
  • demonstrated ability to work in high-volume, fast-paced environments
  • strong communication and interpersonal skills
  • ability to manage multiple priorities and work collaboratively
  • knowledge of food safety and sanitation regulations
  • proficiency with inventory and ordering systems
  • flexibility to work evenings, weekends, and during special events
  • ability to stand for extended periods
  • commitment to maintaining high standards under pressure

Job Qualifications

  • Associate's degree in Culinary Arts or equivalent professional culinary experience
  • progressive culinary leadership experience preferably in premium catering, upscale hospitality, or luxury foodservice
  • proven success in high-volume, complex operations ideally within arenas, stadiums, convention centers, hotels, or large event venues
  • catering and event-driven service experience
  • comprehensive knowledge of culinary trends, premium ingredients, modern techniques, and refined presentation
  • strong understanding of food cost controls, labor management, production planning, and operational efficiency
  • experience supervising and mentoring hourly culinary associates
  • proficiency with Microsoft Office (Word, Excel, PowerPoint), Outlook, and email
  • willingness to engage in client relations and guest satisfaction programs
  • ServSafe certification highly desirable

Job Duties

  • Partner closely with the Executive Chef to lead daily premium culinary operations ensuring quality, consistency, and presentation
  • develop, test, and execute innovative high-end menus tailored to premium guests and VIP clientele
  • oversee planning and execution of premium catering events including large-scale arena activations and private events
  • maintain meticulous attention to detail in food preparation, plating, and service execution across multiple premium outlets
  • support food cost management through inventory controls, waste reduction, ordering, and recipe adherence while preserving product integrity
  • train, coach, and supervise culinary team members fostering craftsmanship, accountability, and continuous improvement
  • demonstrate resilience and adaptability during high-volume, high-pressure service windows
  • ensure compliance with food safety, sanitation, and HACCP standards
  • collaborate with company culinary and marketing teams to roll out new premium culinary programs and guest-facing experiences
  • actively participate in client and guest satisfaction initiatives responding to feedback and elevating premium experience
