The role of the PM Pastry Cook within the Pastry Department, reporting directly to the Executive Pastry Chef, is a vital position responsible for preparing a wide variety of sweet items including pastries, cakes, ice creams, sorbets, fruit compotes, chocolates, and decorative showpieces. The PM Pastry Cook plays an essential role in fulfilling guest orders while adhering to high standards of production, portion control, presentation, and safety. This role requires a skilled culinary artisan with advanced knowledge of pastry preparation techniques and kitchen operations, capable of maintaining consistent quality and presentation standards with attention to detail. The PM Pastry Cook is also responsible for completing mise en place, setting up the station adequately for multiple meal services such as breakfast, lunch, and dinner, as well as managing food preparation schedules to avoid overproduction.

Employees in this role will operate and maintain various kitchen equipment including deep fryers, broilers, stoves, steamers, food processors, mixers, slicers, ovens, steam tables, tilt kettles, waffle irons, and flat top grills, ensuring all tools are cleaned properly to maintain a safe and sanitary work environment. Moreover, the PM Pastry Cook must handle food storage meticulously by dating all containers, rotating stock according to policy, monitoring perishables for proper temperature, and assisting with inventory management to identify shortages or potential food cost issues. Job Duties

  • Prepare pastry items according to guest orders of consistent quality following recipe cards, as well as production, portion, and presentation standards
  • complete mise en place and set-up station for breakfast, lunch, and/or dinner service
  • start food items that are prepared ahead of time, making sure not to prepare beyond estimated needs
  • operate, maintain and properly clean kitchen equipment including deep fryer, broiler, stove, steamer, food processor, mixer, slicer, oven, steam table, tilt kettle, waffle iron, and flat top grill
  • date all food containers and rotate as per policies, making sure all perishables are kept at proper temperatures
  • check parts to shift use, determine necessary preparation, freezer pull and line set up
  • note any out-of-stock items or possible shortages
  • return all food items not used to designated storage areas, covering and dating all perishables
  • assist in setting up plans and actions to correct food cost problems
  • control food waste, loss and usage per policies
  • comply with Category One and Category Two Work Rules and Standards of Conduct
  • work harmoniously and professionally with co-workers and supervisors
