Job Description

The Portland Sheraton at Sable Oaks, a distinguished property under the Colwen Hotels brand, is a prominent name in the hospitality industry known for its commitment to quality and exceptional guest experiences. We are currently seeking experienced Full Time PM Cooks to join our dynamic Food and Beverage team at the Portland Sheraton at Sable Oaks. This role is ideal for individuals who have a passion for culinary arts and possess a high level of dependability and attention to detail. The Full Time PM Cook plays a critical role in ensuring that all meals prepared meet the highest standards of quality, taste, and presentation while strictly adhering to all health and safety regulations.

As a Full Time PM Cook, you will be responsible for preparing food following precise recipe cards, as well as production and portion standards established by the hotel and the Colwen Hotels brand. Working in close collaboration with the kitchen staff, you will be the cornerstone of the evening shift, helping to deliver outstanding dining experiences that reflect the quality and professionalism for which the Sheraton brand is renowned. The position requires attentiveness to the synchronization of food preparation to ensure that dishes are served simultaneously and in a timely manner that satisfies guest expectations.

The role also demands meticulous adherence to food safety standards, proper storage, and handling of food items, and regular maintenance and cleaning of kitchen equipment. As part of the responsibilities, you will report to and carry out instructions from the Executive or Sous Chef, assist in managing inventory levels for shifts, and perform necessary prep work for subsequent shifts. Foster a collaborative team spirit by assisting in various kitchen areas as needed, including dishwashing and cleanup tasks.

Job Requirements

  • Excellent verbal and written communication skills
  • Basic understanding of or ability to learn basic sanitation and regulations for workplace safety
  • Basic understanding of or ability to learn food handling techniques, preparation, and cooking procedures
  • Ability to function well in a fast-paced and sometimes stressful environment
  • Ability to work quickly and efficiently
  • Ability to work well with a team
  • Ability to maintain personal hygiene
  • Prior related experience preferred
  • ServSafe or safe food handling certification as required by individual property

Job Duties

  • Prepare food following recipe cards and production and portion standards
  • Adhere to all applicable Colwen and brand standards
  • Cook menu items in cooperation with the rest of the kitchen staff
  • Answer, report, and follow Executive or Sous Chef instructions
  • Ensure food comes out simultaneously, in high quality and timely fashion
  • Date and rotate stored food items as per hotel and food safety standards
  • Ensure proper time and temperature standards
  • Maintain compliance with applicable health, safety, food handling, hygiene codes, and standards
  • Assist in dish washing and other areas of the kitchen as needed
  • Check par levels for shift use
  • Note out of stock items and possible shortages
  • Operate, maintain, and properly clean all kitchen equipment for cooking, prep, and storage
  • Assist in prep work for the next shift
  • Assist in storing food deliveries
  • Ensure proper breakdown at end of shift and cleaning of kitchen and other workstations as needed
  • Perform other duties as assigned
