This particular role, PM Cook 2 at Tavernetta Vail, is an exciting opportunity born from a partnership between Four Seasons Vail and the acclaimed Frasca Hospitality Group. The collaboration aims to bring the warm and gracious hospitality philosophy of Frasca to Vail through Tavernetta, an Italian- and European-inspired restaurant. This position involves preparing food items according to guest orders and upholding high standards of quality, presentation, and safety.

The PM Cook 2 is responsible for managing mise en place and station setups for various meal services including breakfast, lunch, and dinner, ensuring that all food preparation aligns with recipe guidelines and portion control standards. The role requires maintaining a clean and sanitary work environment while operating and caring for kitchen equipment such as broilers, fryers, ovens, and grills. Beyond food preparation, the PM Cook 2 contributes to cost control by monitoring stock levels, rotating perishables, and minimizing food waste.

Ideal candidates bring at least two years of culinary experience along with formal culinary education or equivalent hands-on expertise. Proficiency in knife skills, multitasking, and computer literacy are essential, as is the ability to lift up to 50 pounds and stand for extended periods. Strong interpersonal skills and the ability to work independently while collaborating harmoniously with the team are also critical. Fluency in English and current U.S. work authorization are required.

Job Duties

  • Prepare food items to order on the line and starting items made ahead of time, making sure not beyond estimated needs
  • Operate, maintain and properly clean kitchen equipment, including deep fryer, broiler, stove, steamer, food processor, mixer, slicer, oven, steam table, tilt kettle, waffle iron, and flat top grill
  • Date all food containers and rotate as per policies, making sure that all perishables are kept at proper temperatures
  • Check pars for shift use, determine necessary preparation, freezer pull and line set up
  • Note any out-of-stock items or possible shortages
  • Return all food items not used to designated storage areas, being sure to cover/date all perishables
  • Assist in setting up plans and actions to correct any food cost problems
  • Control food waste, loss and usage per policies
  • Work harmoniously and professionally with co-workers and supervisors
