The Line Cook role at TPG Hotels, Resorts & Marinas is essential to the smooth operation of any food service area within the hotels and resorts they manage. Line Cooks are responsible for the cost-effective preparation of quality food while ensuring compliance with food safety regulations and brand standards. This position demands precision, attention to detail, and the ability to work in a fast-paced kitchen environment. The role requires preparing ingredients according to recipes, cooking diverse menu items including meats, seafood, vegetables, and sauces, and maintaining the quality and consistency of every dish served to guests. Besides cooking duties, the Line Cook is expected to set up and maintain the cooking station, coordinate timing with kitchen staff to ensure the prompt and synchronized delivery of dishes, and adhere strictly to sanitation and food safety guidelines to prevent contamination, spoilage, or health hazards. The role also involves monitoring inventory levels and communicating any shortages, assisting with menu changes, and maintaining a clean and organized station throughout service. Effective teamwork, communication skills, and adaptability to handle different tasks during busy periods are crucial in this role. This position often involves physical work, including standing, walking, bending, lifting up to 50 pounds, and handling kitchen equipment safely. Job Requirements

  • One or more years of previous experience as a line cook or similar culinary role preferred
  • High school education plus schooling in culinary arts or related major
  • Knowledge of various cooking techniques and food preparation methods
  • Ability to work well under pressure and meet timing requirements
  • Basic understanding of food safety and sanitation practices
  • Ability to work in a team-oriented environment
  • Willingness to work flexible hours, including evenings, weekends, and holidays

Job Duties

  • Prepare and portion ingredients for various dishes following recipes and guidelines
  • Cook and grill a diverse range of menu items including meats, seafood, vegetables, and sauces with precision and attention to detail
  • Set up and organize the cooking station with necessary tools, equipment, and ingredients before service
  • Coordinate with other kitchen staff to ensure all components of a dish are ready at the same time, maintaining efficiency during busy periods
  • Inspect ingredients and finished dishes for quality, taste, and appearance and address any issues promptly
  • Follow food safety and sanitation practices to prevent cross-contamination, spoilage, and health hazards
  • Understand the menu offerings including ingredients, preparation methods, and plating techniques and assist with menu changes and updates
  • Keep the cooking station clean and organized, ensuring that equipment and utensils are properly maintained
  • Monitor ingredient levels and notify the kitchen manager or chef of any shortages or stock requirements
  • Work closely with the kitchen team, communicating effectively and maintaining a positive working environment
  • Be flexible and willing to take on different tasks or responsibilities as needed in a fast-paced kitchen environment
