The Pizzaiolo will be responsible for mastering the preparation of dough and pizza cooking according to Piccolo Buco's high standards. This includes setting up a clean and organized station, monitoring oven temperatures and cook times to ensure consistency, and strictly following recipes, portioning, and presentation guidelines. Ownership of the kitchen environment is crucial – from supporting inventory and prep lists to maintaining spotless kitchen and storage areas, the Pizzaiolo is expected to lead by example and step in wherever needed to keep service flowing smoothly.
Effective communication and collaboration are vital in this role. The Pizzaiolo will use the Kitchen Display System (KDS) to manage cook timing and flow and work closely with managers and front-of-house staff to ensure seamless service delivery. Training and certifying new team members in dough preparation and pizza cooking are also key responsibilities, emphasizing mentorship and leadership within the kitchen team.

This position requires candidates to be at least 18 years of age, have supervisory experience in pizza or prep production within a high-volume, full-service restaurant, and preferably possess scratch kitchen experience. Other essential qualities include a positive attitude, teamwork spirit, physical stamina, and proficiency in English and Microsoft Office Suite. Certifications such as ServSafe and relevant state or local licensing are preferred but not mandatory.
