Job Description
Piccolo Buco by Cooper's Hawk is a dynamic and innovative restaurant brand that combines the vibrant flavors of Roman cuisine with the award-winning wines and sophisticated lifestyle associated with Cooper's Hawk. Cooper's Hawk itself is a well-established winery and restaurant group known for offering a Napa-style tasting room experience that includes a wine-inspired retail shop, a full-service restaurant, a bar, and private event spaces. Since its inception in 2005, Cooper's Hawk has cultivated a unique dining and wine membership experience through its expansive Wine Club. With Piccolo Buco, they aim to bring authentic, scratch-made Italian pizzas and other Roman culinary delicacies to the table, providing guests with memorable meals that celebrate craftsmanship and quality.
At Piccolo Buco, pizza is more than just food — it is an experience steeped in tradition and perfected through attention to detail and passion. The environment is fast-paced, requiring team members to be engaged, coordinated, and motivated to uphold a high standard of dining excellence. The kitchen culture emphasizes teamwork, personal responsibility, and an enthusiastic approach to culinary art. For those who thrive on leading and inspiring teams while carefully crafting each dish, Piccolo Buco offers the perfect environment to grow and excel.
The role of Pizzaiolo at Piccolo Buco is designed for individuals who are not only passionate about pizza but who also take pride in dough preparation and perfect cooking techniques. This position demands mastery in preparing dough and cooking pizzas to Piccolo Buco’s exacting standards, maintaining station organization, monitoring oven temperatures and cook times, and following recipes meticulously. In addition to the technical skills, the role involves leadership responsibilities such as training new team members, supporting inventory and prep work, and ensuring the kitchen stays clean and safe for all staff.
As part of the role, Pizzaiolos are expected to actively communicate with their teammates and support the seamless flow of kitchen operations, collaborating with both kitchen and front-of-house management. This position encourages an open mindset to continuous improvement, seeking feedback, and embodying the values of Piccolo Buco and Cooper's Hawk in every interaction with guests and colleagues.
Employment is offered on an hourly basis with a compensation range from $15.00 to $22.00 per hour, depending on the candidate's skills, qualifications, and experience. Benefits include discounts on dining, carryout, and wine purchases, monthly wine tastings, comprehensive medical, dental, vision, telehealth coverage, and a 401k plan with company matching. Paid time off, flexible scheduling, early pay access, wellness and mental health support, wine and culinary education, career growth opportunities, milestone recognition, and referral bonuses also create a rewarding work environment.
Piccolo Buco values a culture of authenticity, positivity, and passion for food and community. Those who become part of this team are expected to bring energy, professionalism, respect, and a genuine desire to create memorable dining experiences. The workplace supports diversity and equal opportunity employment, complying with all applicable laws and offering accommodations during the employment process. The Pizzaiolo role is ideal for individuals eager to contribute their talents to an award-winning brand that pairs culinary excellence with premium wines and a unique dining lifestyle.
