Job Description

Piccolo Buco by Cooper's Hawk is a distinguished extension of the renowned Cooper’s Hawk brand, bringing the vibrant culinary spirit of Rome and its traditional pizza craft to its guests. Cooper's Hawk itself is celebrated for its Napa-style tasting room, wine-inspired retail experiences, and a full-service restaurant, bar, and private event spaces. Their commitment to delivering a modern yet casual dining experience is matched by their scratch-kitchen philosophy, where every menu item is thoughtfully designed to pair perfectly with their award-winning wines. Since its inception in 2005, Cooper's Hawk has built one of the largest wine clubs in the world, offering exclusive experiences that combine premium wines with curated dining and travel adventures. Piccolo Buco furthers this narrative by focusing on authentic Roman pizza traditions, elevating pizza from mere food to a memorable experience.

The Pizzaiolo role at Piccolo Buco by Cooper's Hawk is an exciting opportunity for culinary professionals passionate about dough, pizza artistry, and leading kitchen teams to excellence. This is a fast-paced, dynamic environment demanding precision, creativity, and strong leadership. The Pizzaiolo will be responsible for mastering the preparation of dough and the cooking of pizza to the establishment’s high standards. Attention to detail is paramount, from accurately following recipes and presentation guidelines to managing oven temperatures and cook times. Beyond technical skills, this role places significant emphasis on teamwork, communication, and creating a warm, collaborative kitchen culture.

The Pizzaiolo will lead by example both during prep and service, taking ownership of their station’s setup, cleanliness, and organization. Supporting inventory management and other kitchen systems is essential for smooth operations. This role demands adaptability to step in wherever necessary to maintain service quality and flow. Effective communication with team members, front-of-house staff, and management ensures seamless service that delights guests. Training and certifying team members on dough preparation and pizza cooking standards fall under this position to uphold consistency and excellence.

In addition to technical and leadership responsibilities, the Pizzaiolo is expected to embody the values of Piccolo Buco by Cooper’s Hawk through genuine interactions, openness to feedback, and a commitment to continuous improvement. Creating unforgettable moments for guests by adding a special touch to every pizza and fostering a positive kitchen environment contributes to the brand’s mission of unmatched dining experiences.

The position offers numerous benefits, including a significant dining and carryout discount, retail wine discounts, monthly wine tastings, comprehensive medical and wellness options, 401k with company match, paid time off, flexible scheduling, early pay access, and opportunities for career growth through structured development plans and rewards programs. The company is an equal opportunity employer that values diversity and inclusion, ensuring fair treatment and accommodations during the hiring process.

This role is ideal for those with at least six months of supervisory experience in pizza or prep production within a high-volume, full-service restaurant, particularly those with scratch kitchen experience. Candidates should be proactive, reliable, and physically capable of thriving in a demanding kitchen atmosphere. Proficiency with the Microsoft Office Suite and a positive, team-oriented attitude are expected, alongside relevant certifications such as ServSafe and compliance with state and local licensing requirements. Overall, this role promises a fulfilling career path, combining the art of pizza making with leadership and growth in a premier culinary environment dedicated to quality and guest satisfaction.
