The role of Pastry Sous Chef at Eataly is an exciting position within this iconic Italian marketplace. This role demands a skilled culinary professional passionate about Italian pastries and desserts who can blend artistry with quality and consistency in a high-volume production environment. Reporting directly to the Pastry Chef, the Pastry Sous Chef manages a talented pastry team of around 10 employees, overseeing the production of a wide range of Italian pastries, cakes, cookies, candies, and other dolci.

The Pastry Sous Chef ensures that all products meet Eataly's high standards for flavor, texture, portion size, and consistency, emphasizing authentic Italian pastry craftsmanship. This role involves hands-on participation in the production process as well as supervisory responsibilities such as scheduling, payroll submission, performance coaching, and team training. The Pastry Sous Chef provides mentorship and constructive feedback to encourage growth and maintain a motivated, cohesive team.

In addition to production oversight, the Pastry Sous Chef plays a critical role in the creative aspect of pastry production, including crafting decorative centerpieces and fulfilling special pastry orders. Organizational skills are essential as the role requires managing inventory, ordering supplies, and maintaining a sanitary and compliant kitchen under Department of Health standards.

Entailing a flexible onsite work schedule often including evenings and weekends, this hourly position compensates between $60,000 and $65,000 annually. Candidates must be physically able to lift up to 50 pounds and maintain mobility for extended periods. Expertise with commercial kitchen equipment such as burning ovens and stand mixers is necessary.

Job Requirements

  • availability to work onsite with a flexible schedule often including evenings and weekends
  • ability to lift up to 50 pounds
  • ability to exert well-paced mobility for up to 8 hours including standing, walking, bending, and squatting
  • ability to use a burning oven, commercial stand mixer, and other pastry baking equipment

Job Qualifications

  • 4+ years of experience in high-volume pastry preparation
  • knowledge of Italian pastries and techniques
  • excellent communication and leadership skills
  • intermediate computer skills
  • degree from a post-secondary culinary or pastry arts training program preferred

Job Duties

  • supervises and participates in the production of all pastry items for counters and restaurants
  • assists in managing the pastry team with scheduling and payroll
  • provides feedback and motivation to pastry staff
  • trains team members on Italian pastry production, principles, and practices
  • coaches and counsels pastry employees
  • verifies all foods prepared meet quality standards in portion size, flavor, texture, and consistency
  • produces decorative centerpieces and special pastry orders
  • orders and requisitions all supplies for the pastry shop
  • maintains a clean and sanitary food production area according to health standards
  • performs other duties as required or assigned
