The Pastry Sous Chef role at Eataly is a significant leadership position within the bakery and pastry team. Reporting directly to the Pastry Chef, this hourly position entails managing and overseeing the production of all pastries, including Italian pasticcini, cakes, desserts, cookies, candies, and other traditional dolci specialties. The Pastry Sous Chef will lead a team of around 10 pastry professionals, ensuring the consistent production of high-quality products that meet Eataly’s rigorous standards for flavor, texture, and presentation.

In this role, the Pastry Sous Chef will directly supervise and participate in daily pastry production, maintaining quality control while fostering a motivated and highly skilled team. Key responsibilities include scheduling the pastry team, handling payroll submissions, training team members on Italian pastry techniques and practices, and providing ongoing coaching and feedback. The Pastry Sous Chef is also responsible for ordering and managing pastry supplies, producing decorative centerpieces for special events, and ensuring the food production area complies with health and sanitation regulations.

Job Requirements

  • availability to work onsite with a flexible schedule often including evenings and weekends
  • ability to lift up to 50 pounds
  • ability to exert well-paced mobility for up to 8 hours including standing, walking, bending and squatting
  • ability to use a burning oven, commercial stand mixer and other pastry baking equipment

Job Qualifications

  • 4+ years of experience in a high-volume pastry preparation position
  • knowledge of Italian pastries and techniques
  • excellent communication and leadership skills
  • intermediate computer skills
  • degree from a post-secondary culinary or pastry arts training program preferred

Job Duties

  • Supervises and participates in the production of all pastry items for Eataly's counters and restaurants
  • assists in managing the pastry team including scheduling, payroll submission, providing feedback and motivation, training on Italian pastry production, principles and practices, coaching and counseling
  • verifies all foods prepared to meet quality standards in terms of portion size, flavor, texture, and consistency
  • produces decorative centerpieces and special orders
  • orders and requisitions all supplies for the pastry shop
  • maintains a clean and sanitary food production area according to Department of Health standards
  • performs other duties as required or assigned
