The role of the Pastry Sous Chef at Eataly is a critical and prestigious position within the organization’s culinary team. This full-time role involves overseeing the production of all Italian pastries, including pasticcini, cakes, desserts, cookies, candies, and other dolci. The Pastry Sous Chef reports directly to the Executive Chef and functionally to the Head of Pastry, managing a pastry team of approximately 10 employees. This key leader not only supervises pastry production but also actively participates in creating high-quality pastry items to be served at Eataly’s diverse counters and restaurants.
In this position, the Pastry Sous Chef assists in managing the pastry team by handling scheduling, payroll submissions, providing constructive feedback, motivation, and coaching. Training the team on Italian pastry production principles and practices is a vital responsibility to ensure that every item prepared reflects the authenticity and excellence that Eataly is known for. The role requires a skillful balance of leadership and hands-on culinary expertise to maintain the highest food quality standards in terms of portion size, flavor, texture, and consistency.
Additionally, the Pastry Sous Chef is tasked with producing decorative centerpieces and personalized special orders, which demands creativity and precision. Ordering and requisitioning all necessary supplies for the pastry shop is part of the logistical duties, ensuring smooth and efficient operations. Maintaining a clean and sanitary food production environment by adhering to Department of Health standards is also essential to uphold Eataly’s commitment to food safety.
This role requires flexibility in working hours, often including evenings and weekends, as well as the physical ability to manage the demanding pace of pastry production, involving standing, walking, bending, and lifting up to 50 pounds. Mastery of equipment such as burning ovens, commercial stand mixers, and various pastry baking tools is necessary to execute complex pastry techniques effectively.

Job Requirements
- availability to work onsite with a flexible schedule often including evenings and weekends
- ability to lift up to 50 pounds
- ability to exert well-paced mobility for up to 8 hours including standing walking bending and squatting
- ability to use a burning oven commercial stand mixer and other pastry baking equipment
Job Qualifications
- 4 years of experience in a high-volume pastry preparation position
- knowledge of Italian pastries and techniques
- excellent communication and leadership skills
- intermediate computer skills
- degree from a post-secondary culinary or pastry arts training program preferred
Job Duties
- Supervises and participates in the production of all pastry items for Eatalys counters and restaurants
- assists in managing the pastry team including scheduling
