As a Pastry Sous Chef, you will work closely with the Executive Pastry Chef to uphold the highest standards of craft, service, and leadership in the pastry kitchen. This permanent, full-time role offers a competitive annual salary ranging from $78,000 to $80,340, reflecting the expertise and dedication expected. You will be an integral part of a passionate team responsible for all aspects of pastry production, from creation and development to budgeting and inventory control. Job Requirements

Job Duties

  • assist the Executive Pastry Chef in planning food budgets and forecasts pertaining to the Pastry Kitchen
  • assist in scheduling and coordinating the work of cooks to ensure timely food preparation within budget
  • interview, train, supervise, coach, counsel and discipline employees in the department in conjunction with HR and the Executive Pastry Chef
  • produce all pastry goods from scratch as required by the menu and design and develop detailed food specifications
  • maintain established food par levels and accurate paperwork for inventory
  • uphold departmental standards of quality and timing for delivery and train cooks in relevant pastry aspects
  • carry out supervisory responsibilities in accordance with organization policies and laws
  • plan, assign and direct work, appraise performance, reward and discipline, address complaints and resolve problems
  • manage production, ordering, and amenity needs
  • maintain kitchen logs for food safety program compliance internally and with the State
  • keep management informed of excess food items that need to be utilized
  • safely and appropriately use baking and measuring tools, equipment, and appliances
  • follow and ensure compliance with food safety handling policies and procedures, including personal hygiene
  • check correct temperatures of kitchen appliances and food and report issues to management
  • perform related duties and special projects as assigned
  • fulfill guest special requests involving food allergies, dietary restrictions and special occasion amenities
  • report and work to correct imperfections and blemishes in line with luxury hotel standards
  • communicate with other departments and extended hotel team to ensure alignment
