Job Requirements

  • High school diploma or equivalent required
  • Formal culinary or pastry training is a plus
  • Minimum of one year professional pastry or baking experience in high-volume kitchen, bakery, or catering environment
  • Strong knowledge of fundamental pastry techniques including mixing, baking, decorating, and finishing desserts
  • Experience with scaling recipes, portioning, and working with various doughs, batters, fillings, and confections preferred
  • Ability to follow detailed recipes and maintain consistency in texture, flavor, and presentation
  • Completion of City of Chicago Department of Public Health Certified Food Service Manager certification preferred or must obtain within 90 days of hire

  • Strong organizational skills with exceptional attention to detail
  • Dedication to maintaining quality and food preparation standards
  • Solid foundational food knowledge including proper handling, preparation techniques, and food safety practices

Job Duties

  • Arrive ready and adhere to the Back of House dress code policy
  • Check in with pastry leadership to receive prep lists, event menu details, and dietary considerations
  • Participate actively in pre-shift meetings for dessert presentation and plating instructions
  • Organize and set up workstation and ingredients for efficient pastry production
  • Prepare pastries by scaling, mixing, rolling, baking, and assembling in line with recipes and event specifications
  • Follow recipes, portion control guidelines, sanitation procedures, and culinary standards precisely
  • Adhere to food safety regulations, proper storage, and temperature controls to ensure compliance
  • Maintain a clean, organized, and sanitized pastry station throughout the shift
  • Collaborate effectively with chefs, pastry cooks, and service staff for smooth execution of dessert plating and presentation
  • Adjust pastry preparation and priorities dynamically in response to event changes
  • Assist in breaking down and cleaning the workstation at the end of each shift
  • Stay informed about shift schedules and updates through the company scheduling system
  • Perform additional tasks as assigned by management
