The Bakeshop team at Disney’s Grand Californian Hotel & Spa is seeking passionate and skilled pastry professionals to fill hourly positions including Full-Time Pastry Chef/Head Baker, Part-Time Pastry Line/Dinner Cook, and Full-Time Pastry Cook/Baker. These roles are perfect for culinary artisans who excel in crafting inventive and high-quality pastries that enhance the guest experience. Employees in these roles will prepare pastries according to precise recipe guidelines, uphold high standards of kitchen safety and sanitation, and execute production with efficiency and care. The Pastry Chef/Head Baker will take the lead in creating specialty desserts and show pieces, manage cake decorating for weddings and special events, and liaise with guests and event planners to customize cake designs. Meanwhile, the Pastry Line/Dinner Cook and Pastry Cook/Baker roles involve preparing complex recipes, working alongside the head baker, and mastering essential pastry techniques such as scaling, mixing, proofing, and decorating. The environment is fast-paced and requires multitasking skills, strong organizational abilities, and a commitment to delivering excellence.

Candidates should have at least two years of culinary experience or a culinary degree with equivalent experience in high-volume production environments. A passion for pastry and baking is essential, along with strong piping skills and the ability to work well within a team-focused atmosphere. Schedules are flexible and may include early mornings, late nights, weekends, holidays, and special events to meet the operation's needs. The pay rates for these positions are competitive, with the Pastry Chef/Head Baker earning $29.00 per hour, the Pastry Line/Dinner Cook at $28.00 per hour, and the Pastry Cook/Baker at $26.20 per hour. Job Requirements

  • Must be at least 18 years of age
  • Passion for pastry and baking
  • Minimum of 2 years culinary or equivalent experience
  • Strong experience with cakes and plated desserts
  • Ability to work in banquet and restaurant environments
  • Knowledge of culinary techniques and terminology
  • Ability to follow recipes in high-volume production

  • Flexibility to work various shifts including nights, weekends, holidays, and special events

Job Qualifications

  • Minimum of 2 years of culinary experience in restaurants or culinary degree with equivalent experience
  • Strong experience with cakes, plated desserts, banquet and restaurant environments
  • Knowledge of culinary techniques and terminology
  • Ability to follow and understand recipes in a high-volume environment
  • Strong organizational skills and ability to work with speed and accuracy
  • Strong listening skills and ability to take direction
  • Strong piping and decorating skills
  • Desire to provide excellent guest service and work well in a team
  • Experience making mousse, pate-a-choux, and French macarons preferred
  • Experience plating fine dining desserts preferred
  • Experience with detailed cake decorating and show pieces preferred
  • Completed culinary education or equivalent leadership experience preferred
  • Bilingual preferred

Job Duties

  • Prepare products according to recipe guidelines
  • Uphold kitchen safety and sanitation including temperature requirements
  • Use good judgment of food quality and production to minimize spoilage
  • Assist Chef in preparing items for guests with special dietary needs
  • Operate bakery tools, measurements, ingredients, equipment, and small wares
  • Clean kitchen equipment and follow HACCP procedures
  • Create and design specialty desserts and show pieces (Pastry Chef/Head Baker)
  • Lead cake decorating for weddings and special events (Pastry Chef/Head Baker)
  • Communicate with guests and event planners about custom cake designs (Pastry Chef/Head Baker)
  • Act as food stylist for banquets and specialty restaurants (Bakeshop Pastry Chef role)
  • Present specialty pastry and cake designs to banquet event clients
  • Model technical skills for baker/pastry culinary production
  • Formulate and prepare complex recipes including baker/pastry recipes and high-end specialty desserts for banquets and fine-dining restaurants (Pastry Line/Dinner Cook)
  • Assist with cake decorating (Pastry Line/Dinner Cook)
  • Knowledge of pastry techniques including scaling, mixing, proofing, baking, decorating, and finishing (Pastry Cook/Baker)
  • Portion and arrange food on serving dishes with attention to portion control and plate presentation (Pastry Cook/Baker)
  • Cook, mix, and season ingredients for bakery items such as muffins, Danishes, cakes, restaurant items, banquet orders, ice cream, or sorbet (Pastry Cook/Baker)
