The role of Pastry Lead at Grand Central Bakery is a key position within the café team, focused on producing exceptional pastries while maintaining operational excellence. The Pastry Lead works closely with café staff and the commissary to ensure pastries meet quality standards, adhere to recipes, and are delivered timely to meet demand. This role pays $22.31 per hour with eligibility for overtime and an additional average hourly tip range of $7.00 to $9.00, making it an attractive opportunity for skilled culinary professionals. The Pastry Lead typically works five shifts per week, which includes a combination of baking, prep, and retail shifts, demanding a flexible schedule that covers weekends and holidays. Reporting directly to the Café Manager, the Pastry Lead serves as an ambassador of the commissary’s craftsmanship, educating team members and customers about the product, and ensuring smooth coordination across operations.

The position emphasizes multi-faceted competencies such as customer orientation, teamwork, problem solving, and communication skills. The Pastry Lead is also responsible for inventory management, ordering ingredients and supplies, overseeing baking equipment, and maintaining a clean and organized workspace. Job Duties

  • Communicates effectively and often with the café team to disseminate relevant information, filter feedback and questions to the Café Manager
  • Leads new hire and ongoing training, provides expertise on pastry baking operations and sourcing
  • Sets pars, ordering and invoicing for commissary pastry, ingredients and baking supplies
  • Meets café pastry cost goals
  • Responsible for specials and new product roll out
  • Troubleshoots and covers pastry shifts when possible
  • Oversees maintenance, cleanliness, and training on baking equipment
  • Ensures high quality food and maintains Grand Central Bakery standards by providing feedback to the commissary team
  • Serves as a positive leader and motivates the team
  • Produces pastries by mixing, forming, proofing and baking efficiently
  • Maintains clear daily communication using various methods regarding product feedback and education
  • Organizes workspace, manages inventory, stocks and orders as needed
  • Sets and enforces standards for pastry quality and holds bakers accountable
  • Communicates product information, systems, techniques, seasonality and sourcing to crew
  • Demonstrates best practices and uses technology skills with Cheftec and Outlook
  • Maintains a clean café environment including bussing, washing dishes and cleaning
  • Shares product sourcing knowledge with customers and team members
  • Works to improve café environment by taking initiative and contributing ideas
  • Utilizes creativity for product displays to maximize sales
  • Volunteers and supports team duties
  • Uses training documents and checklists to achieve proficiency
