We are currently seeking a dedicated and diligent Line Cook to join our culinary team. This role is essential in maintaining the high standards for food quality and kitchen efficiency that our guests expect. The Line Cook will take responsibility for preparing food consistently according to recipe cards, production and portion standards, and managing kitchen functions with a focus on quality and safety. This position demands attention to detail, adherence to food safety protocols, and teamwork to ensure smooth kitchen operations.
The Line Cook will be involved in various critical tasks, such as prepping food items in advance without over-preparation, properly dating and rotating food containers, and ensuring all perishables are stored at the correct temperatures. Additionally, this role requires monitoring par levels, setting up the line for shifts, and assisting with buffet stocking. The Line Cook will also be expected to contribute to controlling food costs and minimizing waste, aligning with HEI Hotels and Resorts' standards.
Operating and maintaining kitchen equipment like deep fryers, broilers, stoves, steamers, mixers, slicers, ovens, and waffle irons safely and efficiently is a core component of the role. Complying with attendance policies and availability to work on a regular schedule are vital for the effective functioning of the kitchen team. Job Requirements
- High school diploma or equivalent
- Prior experience in a kitchen or food preparation role preferred
- Ability to follow recipes and portion standards accurately
- Knowledge of food safety and sanitation standards
- Ability to work flexible shifts including weekends and holidays
- Ability to stand for extended periods
- Reliable and punctual
- Physical ability to handle kitchen tasks including lifting heavy items
Job Qualifications
- Hotel experience preferred
- Finger/hand dexterity to operate food machinery with or without reasonable accommodation
- Ability to grasp, lift, and/or carry goods weighing up to 100 lbs on a continuous schedule with or without reasonable accommodation
- Effective verbal and written communication skills
- Ability to adapt communication style to different audiences including supervisors, coworkers, and the public
Job Duties
- Prepare food of consistent quality following recipe cards and production and portion standards
- Start food items that are prepared ahead of time without over-preparing estimated needs
- Date all food containers and rotate as per HEI Hotels and Resorts standards
- Check pars for shift use, determine necessary preparation, freezer pull, and line setup
- Note any out-of-stock items or possible shortages
- Assist in keeping buffet stocked
- Return all unused food items to designated storage areas with proper covering and dating
- Assist in setting up plans and actions to control food costs and reduce waste
- Operate, maintain, and properly clean kitchen equipment including deep fryer, broiler, stove, steamer, food processor, mixer, slicer, oven steam table, tilt kettle, waffle iron, and flat top grill
- Comply with attendance rules and be available to work regularly
- Perform any other job-related duties as assigned
