The Pastry Cook role at Loews Philadelphia Hotel is an integral part of the culinary team, specifically within the pastry department. The individual filling this position is responsible for maintaining the high standards of food production, ensuring consistent quality, and managing the preparation and presentation of all pastry items. Reporting directly to the Pastry Chef and Sous Chef, and stepping in for Cook I as needed, this role demands a solid grasp of classical pastry skills, including French desserts, chocolate handling, and sugar artistry.
Responsibilities include adhering to standardized recipes to ensure product consistency, controlling food costs and quality, managing inventory control, proper storage, and sanitation policies to comply with health department regulations. Attention to cleanliness, operation of kitchen equipment, and maintaining an organized work environment are fundamental. Flexibility is required, as the role occasionally demands varying schedules that align with hotel business needs, including weekends and holidays.
Candidates will benefit from at least three to four years of pastry experience and ideally possess a diploma or degree in pastry arts. The role also requires proficiency in various techniques such as mixing, piping, cake building, and decorating, alongside knowledge of mousses, custards, sauces, and restaurant-specific dessert specialties. Important hard skills include the operation of kitchen equipment such as mixers, tilt skillets, and ice cream machines, as well as basic mathematical abilities for inventory and portion control.
Key soft skills involve the ability to work effectively under pressure and handle multiple tasks simultaneously while maintaining a cooperative and friendly attitude. Clear communication skills in English, both verbal and written, are essential. Job Duties
- Report directly to the Pastry Chef and Sous Chef
- Prepare all volume food items according to standard recipes and specifications
- Adhere to control procedures for cost and quality
- Check and control proper storage and rotation of products
- Practice inventory controls and manage storeroom items
- Clean and maintain walk-ins, reach-in boxes, and equipment
- Maintain a clean and sanitary work area
- Work varying schedules including weekends and holidays
- Notify supervisors promptly of issues
- Attend hotel meetings and training sessions
- Maintain excellent condition of equipment and workspace
- Execute emergency procedures as per hotel standards
