This newly renovated hotel features 1190 guest rooms, an impressive 170,000 square feet of event space, and eight distinct food and beverage outlets. The role of Pastry Cook at Hilton San Diego Bayfront offers an exciting opportunity for culinary professionals to join a dynamic team dedicated to creating and delivering outstanding guest experiences. This position involves the preparation, production, and baking of a wide array of pastries, breads, rolls, and desserts across multiple food and beverage outlets on the property. The Pastry Cook will play a crucial role in maintaining the hotel's reputation for quality and culinary excellence by adhering to standardized recipes, maintaining cleanliness and food safety standards, and innovating product offerings for both a-la-carte and catering menus.

As a Pastry Cook, candidates will bring at least two years of professional experience in high-volume banquet or pastry commissary production, along with strong technical skills including knowledge of bread production, proofing techniques, fillings, frostings, cakes, mousses, and batters. Expertise in operating commercial baking equipment such as large-scale mixers, commercial ovens, scales, and robot coupes is essential. This role requires meticulous attention to detail, strong piping and decorating skills, and the ability to follow recipes precisely. Flexible availability is necessary, including mornings, evenings, weekends, and holidays, to meet the varying demands of the hospitality industry.

Job Requirements

  • Minimum of 2 years professional experience as a pastry cook or baker
  • Experience in high volume banquet or pastry commissary production

  • Knowledge of high volume production baking equipment
  • Ability to read and follow standardized recipes
  • Strong piping skills and ability to finish and decorate pastries
  • Hotel experience preferred
  • Open availability with flexible schedule including mornings, evenings, weekends and holidays

Job Duties

  • Prepare pastry food items according to designated recipes and quality standards
  • Maintain cleanliness and comply with food sanitation standards
  • Stock, maintain and ensure proper storage and refrigeration of an adequate supply of all prepared product
  • Develop new products for a-la-carte and catering menus, as needed
  • Practice correct food handling and food storage procedures according to federal, state, local and company regulations
  • Display and set baked products on mobile carts according to specifications
  • Prepare daily requisitions for supplies and food items
