Gracious Hospitality Management (GHM) is a renowned hospitality company recognized for its exceptional dining experiences and commitment to quality, culture, and sustainability. As they continue to expand their impressive portfolio, they are introducing their latest and most ambitious project, 550 Madison. This multi-level, 15,000-square-foot dining destination is located inside the iconic Sony building in Midtown Manhattan, a landmark known for its architectural significance and cultural vibrancy. The project brings together three distinct dining concepts: the second New York location of the Michelin-starred COTE Korean Steakhouse, an all-day multi-bar and dining concept called Chimera, and Sushi Yoshitake, an intimate sushi restaurant led by Michelin-starred Chef Masahiro Yoshitake. Designed by the celebrated Rockwell Group with collaboration from Yoshio Itai, the 550 Madison project promises to deliver an immersive and transportive dining experience unlike any other in the city.
The role available at 550 Madison is that of a Pastry Cook within Gracious Hospitality Management's established hospitality team. This position plays an integral part in maintaining the high culinary standards the company is celebrated for. Pastry Cooks are dynamic professionals, responsible for preparing, cooking, and plating exquisite dishes alongside the culinary team. Their main goal is to meet the Pastry Chef's exacting specifications, ensuring consistent quality while maintaining the kitchen and back-of-house areas to the highest hygiene and safety standards.
The Pastry Cook will work in a fast-paced, high-volume environment requiring an individual who can efficiently manage prep work, adhere to safety protocols, and contribute to a collaborative team atmosphere. This role provides comprehensive on-site training for qualified and eager candidates, offering a valuable opportunity to grow within a top-tier hospitality organization. 550 Madison’s opening is planned for Spring 2026, and new hires will undergo several weeks of training prior to the opening to ensure they are fully prepared. This phased approach includes resume screening, interview calls, onboarding by the People and Culture team, pre-opening shifts during friends and family service, and then the grand opening event.
The Pastry Cook is essential to the smooth operation of the kitchen, actively involved in mise en place, preparing menu items, assisting other stations when needed, and helping train new employees. The role emphasizes collaboration with both front-of-house and back-of-house teams to enhance overall customer experience. It requires dedication to safety and sanitation, professionalism, and the ability to work under pressure while maintaining composure. In addition to technical culinary skills such as proficient knife handling, the position also demands strong organizational skills, positive teamwork mentality, and excellent communication abilities.

Job Requirements
- Must be able to work well under pressure in a fast-paced and sometimes stressful environment
- Must be able to maintain a clean and sanitary kitchen and back-of-house areas
- Must have the ability to lift and carry up to 50 pounds
- Must be able to stand and walk for extended periods
- Must be available for flexible scheduling including weekends, nights, and holidays
- Must adhere to all safety and sanitation standards including those set by the CDC and local laws
- Must be punctual and reliable
- Must wear uniform and adhere to grooming standards
- Must be physically capable of meeting the demands of the role, including mobility for up to 12 hours daily and handling kitchen equipment
- Must be willing to comply with all company policies and participate in trainings
Job Qualifications
- Must have the ability to read, speak, understand, follow written directions, and verbal instructions in English

- Culinary Arts degree preferred
- Familiarity with Korean cuisine preferred
- 2+ years similar experience preferred
- Excellent understanding of various cooking techniques, ingredients, equipment, and procedures
Job Duties
- Sets up all assigned stations with appropriate mise en place in advance of service
- Attends all assigned pre-shift meetings and puts out dishes for line check according to company standards
- Prepares menu items in cooperation with the kitchen team at the direction of the chefs
- Follows all allergy protocols and modifies dishes at the direction of the chefs
- Ensures all dishes meet quality and timing standards while actively restocking ingredients
- Labels, stocks, and organizes inventory
- Maintains a neat, orderly, and safe workstation
- Works efficiently with kitchen team members and complies with company procedures and food safety standards
- Keeps utensils and equipment clean and sanitary
- Maintains a positive and professional approach with coworkers and customers
- Breaks down stations fully and reports waste
- Reports to each scheduled shift on time, in uniform, and ready to work
- Assists other stations or areas as requested
- Responsible for training new employees as assigned
