The role available is for a culinary extern, specifically a pastry extern, ideal for Culinary Institute of America (CIA) students completing their pastry externship semester. This position offers an opportunity to gain valuable hands-on experience in a high-profile luxury resort environment while preparing pastry and dessert items for various outlets and banquets. The role entails maintaining production requirements, adhering to quality standards, and upholding strict sanitary and safety regulations in the kitchen. Responsibilities include preparing consistent high-quality food and pastry items, setting up workstations for meal services, managing kitchen equipment, and complying with company policies on food safety and cost control. This temporary full-time position requires flexibility to work early morning, mid-day, and evening shifts to support the 24/7 operational needs of the resort. - Attending Culinary Institute of America, completing externship semester
- Minimum one year culinary/pastry or related work experience
- Culinary/pastry knowledge is expected for this position
- Candidates must possess valid US work authorization
- This position is not eligible for work sponsorship/visa

Job Duties
- Prepare consistent quality food and pastry items following recipe cards and production, portion, and presentation standards
- Complete mis en place and set-up station for breakfast, lunch, and/or dinner service
- Start food items that are prepared ahead of time, making sure not to prepare beyond estimated needs
- Operate, maintain and properly clean kitchen equipment, including but not limited to stove, steamer, food processor, mixer, oven, ice cream machine, dough sheeter, walk in cooler and freezer
- Date all food containers and rotate as per policies, making sure that all perishables are kept at proper temperatures
- Return all food items not used to designated storage areas, being sure to cover/date all perishables
- Follow all established actions for food cost
- control food waste, loss and usage per policies
