Job Requirements
- Minimum 4-6 years experience in cooking, baking, and pastry
- Pastry diploma or degree preferred
- Ability to obtain Food Handler's Card
- Ability to work flexible schedule including weekends and holidays
- Ability to bend, stoop, stand, lift 50 pounds, and push carts weighing up to 200 pounds
- Proficient in English speaking, reading, and writing
Job Qualifications
- Good knowledge of classical French desserts, chocolate handling, and sugar work preferred
- Proficient in mixing techniques, recipe preparation, piping, cake building, and decorating
- Experienced with mousses, custards, and sauces
- Skilled in chocolate tempering, sculpting, and sugar working
- Ability to comprehend and execute banquet event orders (BEOs)
- Creative in the creation of amenities
- Experience handling pop-up events
- Strong knowledge of overnight baking
- Familiar with restaurant desserts and dessert specials
- Ability to work under pressure and handle multiple tasks and difficult situations
- Knowledge of operating all kitchen and pastry equipment including mixers, tilt skillets, and ice cream machines
- Basic mathematical skills
- Able to obtain a Food Handler's Card

Job Duties
- Reports directly to the pastry chef
- Prepares all volume food items according to standard recipes and specifications to ensure consistency of product
- Adheres to control procedures for cost and quality
- Checks and controls the proper storage and rotation of product, ensuring portion control to maintain quality
- Practices inventory controls including preparation and pick up of items from the storeroom
- Stores all food in refrigerated boxes with covers, labels, and dates
- Cleans walk-ins and reach-in boxes, ensuring all equipment is clean, sanitary, and in proper working condition to comply with health regulations
- Maintains area in clean condition at all times
- Works varying schedules that reflect business needs
- Performs all other assigned duties
