The Pastry Cook 2 role at Four Seasons Nashville is a key position responsible for crafting a variety of sweet culinary delights including pastries, cakes, ice creams, sorbets, fruit compotes, chocolates, and decorative showpieces. This role requires precision, creativity, and adherence to high-quality standards to ensure that every item satisfies the discerning tastes of the guests and meets the production requirements of banquet events. Additionally, this position plays a critical part in maintaining a safe and sanitary kitchen environment, reflecting the brand’s commitment to excellence.
The position involves preparing pastries according to guest orders, focusing on consistency, presentation, and portion control. It also includes tasks such as completing mise en place for multiple meal services, operating equipment like commercial mixers and ovens, and managing inventory and food safety practices including proper storage, labeling, and cost control. Job Requirements
- High school education or equivalent
- minimum three years culinary experience
- ability to operate and maintain commercial baking equipment safely
- proficiency in knife skills
- ability to multi-task
- commitment to food safety and sanitation standards
- willingness to work flexible hours
Job Qualifications
- High school education, cooking school, culinary institute education or equivalent experience
- minimum three-years culinary experience
- intermediate culinary knowledge is required for this position
- working knowledge is generally learned on-the-job
- ability to safely operate, maintain and clean commercial baking equipment including mixers, ovens, and sheeters
- proficient knife skills and ability to multi-task
Job Duties
- Prepare pastry items according to guest orders of consistent quality following recipe cards, as well as production, portion, and presentation standards
- complete mise en place and set-up station for breakfast, lunch, and/or dinner service
- start food items that are prepared ahead of time, making sure not to prepare beyond estimated needs
- operate, maintain and properly clean kitchen equipment, including commercial mixer, food processor, oven, waffle iron, and dough sheeter
- date all food containers and rotate as per policies, making sure that all perishables are kept at proper temperatures
- check pars for shift use, determine necessary preparation, freezer pull and line set up
- note any out-of-stock items or possible shortages
- return all food items not used to designated storage areas, being sure to cover/date all perishables
- assist in setting up plans and actions to correct any food cost problems
- control food waste, loss and usage per policies
- comply with Four Seasons’ Category One and Category Two Work Rules and Standards of Conduct as set forth in EmPact
- work harmoniously and professionally with co-workers and supervisors (10%)
