The role of Pastry Cook at Fairmont Austin is an exciting opportunity for culinary professionals who are enthusiastic about their craft and eager to develop their skills in a fast-paced, high-standard environment. Reporting directly to the Executive Pastry Chef, the Pastry Cook plays a crucial role in the pastry kitchen, contributing to the creation and execution of high-quality desserts and baked goods that delight guests and uphold the Fairmont brand’s reputation for culinary excellence.
This position involves a comprehensive range of responsibilities, including preparing pastry menu items according to prescribed recipes, ensuring quality control through tasting and presentation, maintaining cleanliness and organization of work areas and equipment, and adhering to strict health and safety standards dictated by ServSafe and Environmental Health Codes. The Pastry Cook collaborates closely with Sous Chefs and Chef de Parties to maintain smooth production flow and operational efficiency. Attention to detail, a commitment to craftsmanship, and a willingness to learn and grow are essential traits for success in this role.
In addition to technical skills, the Pastry Cook is expected to actively engage in team communications, sharing ideas and feedback during daily briefings, contributing to inventory management through accurate storeroom requisitions, and supporting the hotel’s commitment to minimizing food waste. Job Duties
- understand the importance and demonstrate a commitment to our 'Our Culinary Culture'
- as a pastry cook you will display an openness and willingness to learn all things pertaining to your professional development
- provide full cooperation to the sous chef and chef de parties on duty to ensure the highest level of production
- have full knowledge of all pastry menu items, syllabus, daily features and promotions as it applies to your operation
- ensure all food is prepared according to the recipes and standards specified by the executive pastry chef, this includes quality checks and tasting all food prior to it being served
- ensure the cleanliness and maintenance of all work areas, utensils, and equipment
- follow kitchen policies, procedures and service standards
- ensure all EHC and Servesafe standards are followed supporting the direction of your sous chefs and chef de parties
- ensure all EHC standard temperature logs are completed accurately
- maintain proper rotation of product in all chillers to minimize wastage/spoilage
- actively share ideas, opinions and suggestions in daily shift briefings
- ensure storeroom requisitions are accurate
- other duties as assigned
