Dolly Parton's SongTeller Hotel is the latest hospitality venture launched by Herschend Enterprises, a renowned family-owned company known for its themed attractions and family entertainment offerings. Located in the heart of downtown Nashville, this unique hotel celebrates the iconic career and spirit of Dolly Parton, providing guests with an immersive experience that combines music, style, and hospitality, all crafted in the distinctive Dolly way. The hotel features 245 rooms, two food and beverage entertainment venues, a market, and Dolly Parton's Museum, offering a rich blend of local culture, music, and culinary excellence. SongTeller Hotel is much more than a place to stay; it serves as a vibrant hub that connects guests to the local music and culinary scenes while embodying Dolly Parton's charm, humor, and trailblazing spirit.
We are currently seeking an accomplished and motivated Pastry Cook to join the team and support operations across all culinary outlets within the SongTeller Hotel. This role is essential in ensuring the success and profitability of the hotel's unique food and beverage offerings. The candidate will work closely with the Pastry Chef and kitchen leadership to produce high-quality pastries, desserts, and specialty items for various outlets, including restaurants, coffee shops, and banquet services. Responsibilities include daily pastry production under guidance, preparing and assembling entremets, cookies, plated desserts, and specialty items while maintaining strict adherence to established recipes, portion standards, and presentation guidelines. The Pastry Cook will also assist in making components like creams, mousses, and glazes, support plated dessert assembly and banquet plating, and maintain efficient mise en place for all pastry workstations.
The role demands a strong knowledge of modern and classical pastry techniques, food safety standards, and sanitation practices such as labeling, dating, rotation, and allergen awareness. The ideal candidate will thrive in a fast-paced, high-volume environment, demonstrating excellent organizational skills, professionalism, effective communication, and teamwork capabilities. Physical stamina is also required to meet the demands of long periods of standing, lifting, and working in varying kitchen temperatures. Job Requirements
- Must be at least 18 years of age
- High school diploma or equivalent
- Minimum 1-2 years of professional pastry or bakery experience
- Ability to obtain and maintain ServSafe Certification
- Strong knowledge of food safety and sanitation practices
- Ability to follow recipes and portion standards accurately
- Excellent organizational and communication skills
- Ability to work flexible hours including nights, weekends, and holidays
- Ability to meet physical requirements such as standing for extended periods and lifting heavy loads
Job Qualifications
- Must be at least 18 years of age with a high school diploma or equivalent
- Culinary or Baking & Pastry degree preferred
- Minimum of 1-2 years of pastry or bakery experience in a professional kitchen
- Ability to obtain and maintain a ServSafe Certification
- Strong foundational knowledge of pastry techniques including doughs, batters, creams, and plated dessert components
- Ability to follow recipes, portion standards, and presentation guidelines consistently
- Working knowledge of food safety, sanitation, labeling, and FIFO practices
- Strong organizational skills with ability to prioritize and adapt in fast-paced, high-volume environments
- Effective communication and teamwork skills
- Basic math skills for measuring, scaling recipes, and portioning
- Ability to work flexible schedules including mornings, evenings, weekends, holidays, and overtime
- Ability to meet physical demands including standing for long periods and lifting up to 50 lbs
Job Duties
- Execute daily pastry production under direction of the Pastry Chef with focus on entremets, cookies, plated desserts, and specialty items for all outlets
- Report to the Pastry Chef or Sous Chef to review daily production objectives, assignments, priorities, and menu updates
- Prepare, assemble, and finish pastry items according to established recipes, portion standards, and presentation guidelines
- Assist in the production of components such as creams, mousses, glazes, doughs, batters, and garnishes
- Support service execution, including plated dessert assembly and banquet plating
- Assist with daily mise en place and station setup
- Ensure assigned workstation is properly stocked with required par levels and supplies
- Maintain high standards of product quality, flavor balance, texture, and refined presentation
- Demonstrate knowledge of modern and classical plating techniques
- Follow all food safety and sanitation standards including labeling, dating, rotation, and allergen awareness
- Assist in monitoring inventory levels and support proper storage
- Maintain cleanliness of kitchen areas and equipment
- Support kitchen leadership and collaborate with team members
- Promote a positive and collaborative team environment
- Follow all company operational standards and health department regulations
- Adapt to changing business levels and work varied schedules as needed
