The role of Pastry Cook aboard The World is vital to maintaining the high culinary standards expected by its discerning Residents and Guests. This position is primarily responsible for the daily production of premium pastry products that emphasize freshness, taste, and consistent quality. The Pastry Cook must strictly adhere to recipes while also catering to the individual preferences of Residents, ensuring a personalized dining experience reflective of the yacht’s superior service standards. Duties include preparing a range of confectionaries such as candies, petit fours, and frozen or cold desserts, along with decorating and presenting pastries for buffets and special events. The Pastry Cook is expected to manage ingredient procurement and storage, maintain hygiene and safety standards, and efficiently handle inventory to minimize waste. Communication with the Executive Pastry Chef is crucial for reporting, coordinating, and maintaining seamless culinary operations. Beyond culinary responsibilities, the role involves active participation in guest services and safety education programs, including upholding standards defined by Leading Quality Assurance (LQA), Public Health and Safety Management regulations, and company-established protocols. This position demands flexibility to work rotating shifts including nights, weekends, and holidays, and physical endurance to meet the rigors of life on board a luxury yacht. Job Requirements

  • able to read, write and speak fluently in English
  • culinary school 2-4-year degree or foreign equivalency preferred
  • certificate in sanitation and public health preferred
  • minimum of 2 years’ relevant experience on a luxury cruise ship, private country club or similar, luxury hotel or resort
  • minimum of one year experience in pastry production may be combined with formal culinary training
  • good computer skills to include Word, Excel and Outlook
  • knowledge of all basic pastry techniques and skills, including pastry principles, formulas and measurement, starches, fats, sugars, liquids, eggs, and flavorings
  • knowledge of basic equipment including balance scales, mixers, and ovens
  • experience in pastry production and presentation
  • ability to convert quantities mathematically
  • working knowledge of inventory management systems and Fidelio
  • ability to work seven (7) days a week for an extended period, including day or night, weekends and holidays
  • while performing the essential functions of this job, all crew are required to stand, walk long distances on the ship and may include the repetitive motion of bending, climbing, going up and down the stairs and lifting up to 23 kilograms
  • all team members must be physically able to participate in emergency life-saving procedures and drills
  • all vessel positions require full use and range of arms and legs as well as full visual, verbal and hearing abilities to receive and give instructions in the event of an emergency including the lowering of lifeboats
  • work within different temperature changes indoors to outdoors
  • ability to pass STCW safety course
  • able to live harmoniously in close quarters

Job Qualifications

Job Duties

  • prepare candies, petit fours, frozen and cold desserts
  • adhere to all recipes and cooking methods
  • decorate, portion and plate pastries for buffets and presentations
  • ensure all food is prepared fresh and is of the highest quality
  • ensure all ingredients are properly procured, stored, scaled, and prepared
  • check food temperature and follow proper procedures in regards to chilling and holding food
  • report waste to the Executive Pastry Chef
  • communicate with the Executive Pastry Chef regarding pastry related matters
  • check station prior to leaving to ensure cleanliness, proper disposal, storing and labelling
  • assist in achieving the budgets by minimizing waste and breakage and maintaining proper handling procedures
  • acknowledge Residents’ preferences and ensure all changes are communicated
  • exceed Resident and Guest expectations in every aspect of personalized service in accordance with Leading Quality Assurance (LQA) standards
  • actively support the goals and objectives for the department and adhere to all new policies and company initiatives as assigned
  • participate in the buddy program
  • actively participate in Company trainings as required
  • maintain accurate Time & Attendance Records for each time period worked
  • ensure all areas are maintained in accordance with Public Health (HACCP), Safety Management System (SMS) and Safety & Environmental regulations
  • execute safety duties as per the Emergency Plan and Station Bill
  • assist with Ship tours, Zodiac landings, Marina days, Expeditions, and other activities when required
