The Pastry Cook position at Conrad Nashville is a critical role within the culinary operations, specifically supporting the Pastry Chef to ensure the highest standards of quality and creativity are consistently met. The successful candidate will be involved in planning, preparing, and presenting a wide variety of pastry products including pastries, desserts, breads, ice creams, sorbets, creams, simple syrups, and specialty items. Job Requirements

  • High School Diploma or GED
  • Minimum 2+ years experience in hotel, restaurant, or catering facility of similar caliber
  • Experience in fast paced, high volume atmosphere
  • Ability to prepare and bake a variety of pastries, rolls, and other baked goods
  • Must possess reading ability regarding schedules, menus, policies, orders, etc
  • Must possess mathematical ability
  • Good organizational and communication skills
  • Excellent customer service skills
  • Ability to read, write and speak fluent English
  • Obtain and maintain position-specific licensing
  • Position requires regular, reliable attendance
  • Ability to stand for long periods of time
  • Ability to maneuver efficiently between stations and areas
  • Ability to lift up to 40 lbs
  • Requires manual dexterity to operate kitchen equipment
  • Flexibility to work any day/time including weekends and holidays

Job Qualifications

Job Duties

  • Understand and maintain all standard pastry recipes
  • Responsible for production of sweet items, pastries, cakes, fruit compotes, breads, chocolates, etc. for all outlets as well as banquets and amenities
  • Assist in producing and plating pastries and desserts
  • Work well under pressure of meeting production schedules and timelines for pastry needs
  • Ensure sanitation procedures and organization of work area adhere to all health code regulations and standards
  • Maintain food and supply inventory levels and notify management of restocking requirements
  • Demonstrate the ability to apply advanced cooking techniques to produce creative pastry dishes
  • Follow approved methods of product preparation to ensure consistency and quality
  • Offer recommendations for improving preparation methods and recipe development
  • Demonstrate thorough understanding and consistent application of sanitation procedures
  • Ensure proper food handling procedures are always followed
  • Properly use kitchen equipment maintaining highest safety standards
  • Identify and store product specific to outlet and take active role in quality control
  • Produce food orders in a timely, neat, and organized manner according to guest needs
  • Maintain familiarity with product inventory in freezers and coolers and ensure proper rotation
  • Assist in controlling product costs by managing product waste
  • Keep workstation organized and produce required quantities per demand
  • Work independently and make informed decisions in absence of supervisor
  • Assist with training new team members and demonstrate proper culinary techniques
