The Dixboro Project is a visionary hospitality and dining establishment situated in the historic village of Dixboro, Michigan. This unique project blends world-class dining experiences, transformational hospitality, and rich natural surroundings, creating a truly immersive environment for visitors and guests. Central to this project is The Dixboro House, a restaurant developed within the bones of an original barn structure dating back to 1880. This century-old barn has been carefully restored to highlight its magnificent features, including exposed 140-year-old timbers, a gambrel vaulted ceiling, and an original stone fireplace. These historical elements combine with a modern kitchen to offer guests a warm and inviting atmosphere that fuses tradition with contemporary culinary excellence.
In addition to The Dixboro House, The Boro serves as the takeout and all-day cafe arm of the project. This side-door venue focuses on casual dining with woodfired pizzas, takeaway meals, freshly baked goods, Roos Roast coffee, adult beverages, and a variety of other offerings designed to cater to customers looking for convenience and quality. The Bakery is another key component of the project, providing expertly crafted pastries, breads, cakes, and quiches that supply both The Dixboro House and The Boro. Known for its artisanal quality and passion for baking, the Bakery continually supports the entire operation by ensuring fresh, innovative, and delicious products.
The Pastry Cook position is a pivotal role within the Bakery team. This position requires enthusiasm, dedication, and a commitment to high-quality production. The Pastry Cook is responsible for executing daily pastry preparations, adhering strictly to recipes and presentation standards, and maintaining consistent quality in all products. Working closely with the Executive Pastry Chef and the rest of the pastry team, the Pastry Cook helps maintain an efficient and productive kitchen environment. This role is essential for delivering exceptional desserts, laminated doughs, quick breads, and other pastry items that satisfy the high standards set by The Dixboro Project.
The role requires attention to detail in tasks such as portioning, scaling, shaping, and finishing plated desserts, ensuring every item meets taste, texture, and visual expectations. Additionally, the Pastry Cook must maintain an organized, clean, and well-stocked workstation while following health and safety standards including proper food labeling, storage, and rotation using FIFO principles. This position also involves operating and caring for pastry equipment and actively communicating with the pastry team about production needs and product availability. The Pastry Cook plays a supportive role during high volume periods and contributes to product development and continuous improvement within the bakery. Job Requirements
- Prior experience working in a pastry or baking role in a professional kitchen is required
- Early morning, weekend and holiday availability as needed
- Able to work in environments with varying temperatures including heat, humidity and cold storage
- Able to stand and move for extended periods throughout a shift
- Frequently lift and carry 25 to 35 pounds
- Occasionally lift up to 50 pounds
- Strong attention to detail with the ability to execute consistently at a high level
- Strong communication and teamwork skills in a fast-paced environment
- Knowledge of food safety and sanitation standards
- ServeSafe certification is a plus
- Organized and adaptable with the ability to adjust to changing production needs

Job Duties
- Execute daily pastry prep lists with accuracy, consistency and efficiency
- Follow all recipes, techniques and plating standards with strict adherence
- Prepare a wide range of products including cakes, pastries, laminated doughs, quick breads and desserts
- Finish plated desserts with attention to detail and presentation standards
- Maintain proper portioning, scaling and shaping techniques across all pastry production
- Ensure all products meet quality expectations for taste, texture and appearance
- Maintain a clean, organized and fully stocked workstation at all times
- Properly label, date, store and rotate all products using FIFO and health code standards
- Operate and maintain all pastry and baking equipment according to safety and maintenance standards
- Communicate production needs and product levels to the pastry team and leadership
- Support pastry and bakery production across all areas during high volume periods
- Contribute to product development and continuous improvement of pastry offerings
