The Chef de Partie role at Fairmont Austin is a key leadership position within the culinary team that reports directly to the Executive Assistant Pastry Chef. This role requires a highly organized, motivated individual who can lead, supervise, and inspire a team of cooks while maintaining the highest standards of food quality and kitchen operation. The Chef de Partie supports the Sous Chef on duty by prioritizing tasks, delegating duties, and ensuring efficient service delivery. They are expected to demonstrate a proactive approach to teamwork, motivating colleagues to foster a cohesive and productive environment.
This role offers the chance to be deeply involved in the smooth execution of a sophisticated culinary program that emphasizes quality, creativity, and sustainability. The Chef de Partie must have comprehensive knowledge of all menu items, daily features, and promotions. They are responsible for ensuring recipes and standards set by the Chef de Cuisine and Sous Chef are meticulously followed. The position demands attention to detail in food preparation, quality assurance, and compliance with safety and hygiene standards such as Servesafe and Environmental Health and Safety (EHC) protocols.
The successful candidate will oversee station operations, maintain cleanliness and organization of all work areas and equipment, and maintain proper rotation of products to minimize waste. They contribute ideas and feedback during daily briefings and maintain open communication channels with other chefs regarding guest feedback and operational improvements. Sustainability is a key focus, with responsibilities including adherence to recycling, composting, and waste management practices.

- previous experience in a professional kitchen
