The role available is a leadership position in the culinary department, specifically overseeing the pastry operations within Ameristar's multi-outlet environment. This full-time position pays between $76,000 to $80,000 annually based on experience. The successful candidate will play a critical role in maintaining high standards for quality, production efficiency, and health and safety compliance, while managing and developing the pastry team across all venues. This position offers a unique blend of culinary expertise, management skills, and operational oversight, making it ideal for an experienced pastry chef or culinary supervisor ready to take on greater responsibility in a thriving, high-volume hospitality setting.
The Pastry Manager is responsible for staffing, scheduling, training, and evaluating the pastry culinary team and ensuring smooth operations of all pastry production and quality control processes. This includes overseeing central baking operations, storage logistics, delivery timing, and garnish presentation in accordance with Penn's corporate standards. The role demands adherence to health and safety regulations, active involvement in strategic planning with the executive chef, and participation in cross-departmental communications. The Pastry Manager must also manage financial controls related to ingredient purchasing, labor costs, and waste mitigation while ensuring consistent product quality through rigorous checks and evaluations.

Job Requirements
- Must be 21 years of age
- must successfully pass a background check
- completion of a culinary arts degree or accredited apprenticeship
- four years of progressive high-volume pastry preparation experience
- minimum one to two years in a culinary supervisory capacity
- computer literacy including Excel and Microsoft Word
- ability to perform duties of a multi-outlet area manager
Job Qualifications
- Completion of a culinary arts degree or accredited apprenticeship specializing in baking and pastry arts
- four years of progressive high-volume pastry preparation experience
- minimum one to two years in a culinary supervisory capacity or equivalent combination of training, education, and experience
- computer literacy including Excel spreadsheet and Microsoft Word for recipe tracking and reporting
- ability to perform duties of a multi-outlet area manager
- strong leadership and team development skills
- knowledge of health department regulations
- excellent organizational and communication abilities
- ability to manage financial controls related to food production and labor costs
Job Duties
- Staffing and development: staff, schedule, evaluate, train, develop, and monitor the property pastry culinary team
- recommend wage increases, promotions, demotions, discipline, and other employment actions for team members
- multi-outlet operations: understand department objectives, standards, guidelines, and budget
- adjust daily schedules according to business and banquet occupancy levels
- production and quality control: oversee all central baking and pastry operations, including bulk preparation methods, storage logistics, cross-property transportation, timing of delivery, and garnishing
- ensure high-quality presentation of all desserts and baked goods
- health and safety compliance: observe and monitor staff adherence to health department regulations regarding food handling, storage, temperature logs, cooling charts, and cleanliness
- strategic planning: assist the executive chef in developing and implementing department management plans including labor schedules, equipment maintenance systems, and operational goals
- administrative systems: assist the executive chef in developing and implementing policies, procedures, and rules including central pastry operations manuals
- cross-departmental alignment: ensure proper communication between front of house venue managers, banquet service staff, and back of house operations
- quality checks: ensure periodic quality checks for all pastry products
- daily deliveries and deadlines: meet daily deadlines of opening, menu documentation, banquet prep sheets, sample dish production, nightly production reports, prep levels, and inventory comparisons
- cost transfer financial control: monitor pastry ingredient purchasing, staffing, prep execution, and central inventory to manage labor costs and mitigate waste
- product consistency: monitor and evaluate food preparation by observing baking techniques and tasting results
- asset security: open and close work areas, ensure cleanliness and security of company assets
- menu engineering: research and develop property-wide menu changes and specialized dessert concepts
- vendor procurement: write and cost detailed recipes and manage digital master collection of pastry recipes
- station management: oversee station prep lists, stocking, and setup
- kitchen inspections: initiate kitchen walk-throughs to ensure quality and cleanliness
- equipment care: oversee maintenance and operation of specialized kitchen equipment
