Bread & Butter is a renowned artisan bakery located in Chattanooga that has been delighting locals with their exceptional sourdough breads, croissants, and scratch-made pastries since 2016. The bakery combines traditional techniques with innovative approaches to create outstanding bakery products that cater to both retail customers and wholesale clients. We are currently seeking an experienced Pastry Chef to lead and expand our pastry program. This is a unique opportunity to join a small but dynamic team of 15, where craftsmanship, creativity, and collaboration are highly valued. The successful candidate will be a hands-on working chef who is enthusiastic about managing daily production while steering the creative vision of our pastry offerings. With the responsibility of overseeing a diverse range of pastries including cookies, brownies, quiches, seasonal desserts, and the delicate art of viennoiserie like croissants and danishes, this role is pivotal in maintaining and elevating our bakery's reputation.
Beyond just baking, the Pastry Chef will manage production schedules, prep lists, and inventory, ensuring the seamless operation of both retail and wholesale departments. Leadership is critical in this role, with a focus on training and mentoring the pastry team members to foster professional growth and uphold the highest standards of quality and consistency. As a key creative force, the Pastry Chef will drive seasonal menu development and introduce innovative new products that keep Bread & Butter at the forefront of artisan baking.
Working in a close-knit environment offers the Pastry Chef significant autonomy and influence, making this position ideal for those who appreciate the importance of their decisions in shaping the business. The role requires early morning availability typically starting between 6 and 7 am, reflecting the demands of a bakery setting. In addition to a competitive salary range from $40,000 to $50,000 based on experience, we provide a $100 monthly wellness stipend, paid time off, and a monthly bakery stipend to enjoy our freshly made products.

Job Requirements
- 3-5+ years of commercial pastry experience
- Experience with laminated dough and viennoiserie
- Proven leadership and team development skills
- Reliable for early morning operations typically starting at 6-7 am
- Ability to manage a pastry program in a small business environment
- Strong attention to detail and creativity
- Commitment to quality and consistency
Job Qualifications
- 3-5+ years of commercial pastry experience
- Laminated dough and viennoiserie experience strongly preferred
- Proven ability to lead and develop a team
- Creative, detail-oriented, and committed to producing high-quality work
- Experience working in a fast-paced bakery or food production environment
Job Duties
- Own and lead the full pastry program including cookies, brownies, quiches, seasonal desserts, and more
- Produce and oversee viennoiserie including croissants, danishes, and laminated doughs
- Manage production schedules, prep lists, and inventory to support retail and wholesale demand
- Train, mentor, and develop pastry team members
- Drive seasonal menu development and new product creation
- Maintain and uphold quality and consistency standards across all pastry items
- Collaborate with bread and kitchen teams on special projects and seasonal offerings
