The Pastry Chef role plays a crucial part in upholding the culinary standards that American Cruise Lines is known for. This position involves crafting a broad array of desserts, pastries, breads, and confectionary delights that form a significant part of the onboard dining experience. The Pastry Chef is expected to bring creativity and expertise in flavor pairings and food presentation to ensure that every dish served is not only delicious but visually appealing. Responsibilities include adhering to the daily dessert and baking menu, preparing high-quality products following established procedures and recipes, and maintaining the cleanliness and organization of the pastry station in compliance with FDA standards.
Beyond daily baking tasks, the Pastry Chef is also tasked with managing inventory, scheduling production to ensure a constant supply of fresh baked goods, and troubleshooting any shortages or equipment issues in coordination with the Executive Chef. This position demands a proactive individual who is passionate about culinary innovation and continuously seeks to explore new recipes to enhance the guest experience. Living and working onboard the cruise vessels, the Pastry Chef will enjoy comfortable living quarters and a well-equipped galley with scenic views, creating a unique and rewarding working environment. Job Requirements
- Education in culinary arts or equivalent experience
- 3-5 years of pastry chef experience with quality production focus
- Ability to pass pre-employment drug screening
- Ability to pass criminal background check
- Must possess or obtain a Transportation Worker Identification Credential (TWIC)
- Ability to perform essential job functions with or without accommodation
- Ability to live onboard and work 7 days per week
- Capability to stand for entire shifts and lift up to 50 lbs
- Ability to adapt to vessel's motion and work under pressure
Job Qualifications
- An associate's degree in culinary arts or pastry and baking, and/or 3-5 years of experience with an emphasis on quality production
- Basic understanding of professional baking and pastries and food and beverage knowledge
- Problem solving skills, organization skills, and self-motivation
- Commitment to quality service
- Must be able to pass a pre-employment drug test
- Must complete a criminal background check
- Transportation Worker Identification Credential (TWIC)
- Ability to perform the essential functions of the job with or without accommodation
Job Duties
- Oversee creativity and prepare all desserts, bread, pastries, cookies, etc. required for vessel each day
- Prepare and serve items in accordance with established procedures, recipes, portion size, and presentation standards
- Set-up, maintain, and break down station according to FDA standards
- Taste all products produced to assess quality
- Notify the Executive Chef of any product shortages or equipment maintenance issues
- Maintain accurate counts on all food items prepared to prevent discrepancies between amount of food needed and food prepared
- Schedule the production of all baked goods
- Always maintain an inventory of fresh baked goods
- Use food production equipment according to manufacturer's instructions
- Maintain a professional appearance at all times
- Ensure that each guest has a positive and memorable experience
